Further, this is an excellent recipe to make on hot summer days as cucumber is a coolant vegetable that keeps the stomach light and calming. In fact, I made this recipe for the first time and loved it so much. It is a must to try if you like raw cucumber salad.

Ingredients for khamang kakdi:

Cucumber - 1 medium chopped
Coconut - 2 tbsp grated
Cilantro/Coriander leaves - 1/4 cup chopped
Roasted Peanuts - 2 tbsp crushed
Sugar - 1/2 tsp
Salt - As per taste
Lemon juice - 1 tbsp

For Tempering:

Ghee - 1 tsp
Mustard Seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Curry leaves - 1 sprig
Green Chilli - 1 chopped
Hing/Asafoetida - A pinch

Tips:

1. Use only fresh cucumber; any variety can be used, and peeling the cucumber skin is optional.
2. You can either use fresh or frozen coconut. Desiccated coconut doesn't work well.
3. Add more green chili if you want it spicy.
4. Sugar is added to balance the flavor.
5. A cup of dahi/yogurt can be added.
6. You may garnish it with some pomegranate kernels.
7. Roasted and crushed peanuts work great for added crunch.

How to make khamang kakdi chi koshimbir:


1. Firstly, roast the raw peanuts in a pan until it turns golden brown. Let it cool, and then crush it coarsely in a spice grinder.
2. Secondly, add chopped cucumber, coriander, and grated coconut to a bowl.
3. Add crushed peanuts, salt, and sugar.
4. Give it a nice mix and pour lemon juice.
5. Now, heat ghee in a tadka pan. When it is hot, add mustard seeds, cumin seeds, green chili, and curry leaves. Fry for a minute and switch off the gas.
6. Pour the tempering over the salad and mix it well.
7. Finally, serve the khamang kakdi koshimbir is ready to serve with roti or rice.
