The other names for chickpea are garbanzo bean, Egyptian pea, Bengal gram in English. Also channa and chole in Hindi, and kondakadalai in Tamil. 

We love to have salads for lunch. In India, chickpeas are used in different ways. Boiled beans are used to make salads, curry for roti and chapati, sundal recipes, etc.

Chickpea flour or besan flour is used to prepare bajji, bonda, pakoras, dhokla, etc. Besan flour can also be used on our face and body to get smooth and flawless skin.

Chickpea is my favorite legume, it is loaded with proteins, fiber, vitamins, and minerals. It is a perfect recipe for vegans and vegetarians. I always prefer getting the dried beans from the Indian grocery store and soak them overnight and boil them in water and salt.

You can boil the beans using a pressure cooker or an Instant Pot. If you don't have time, you may buy canned beans which are so convenient, as it is already cooked and ready to use in salads, curries, etc. Now, let's get into the recipe!

  1. Romaine lettuce - 1/4  bunch
  2. Green Leaf lettuce - 1/4 bunch
  3. Avocado - 1 big
  4. Red onion - 1 small
  5. Persian cucumber - 1
  6. Tomato - 1 
  7. Garbanzo beans - 1/4 cup boiled
  8. Cilantro - 4 sprigs roughly chopped

For Salad Dressing:

  1. Olive oil - 20 ml or 1 tbsp
  2. Himalayan Pink salt - as per your taste
  3. Black pepper - as per your taste
  4. Lemon juice - 1 tbsp

How to cook garbanzo beans / How to pressure cook chickpeas:

1. Soak the dried chickpeas overnight in room temperature water. And, the next day, pressure cook the chickpeas with enough salt and water for 15 to 20 mins. Once the pressure is released, take out boiled chickpeas from the cooker. Drain the excess water and keep it aside. (Note: You can also use canned garbanzo/ chickpeas for this salad recipe).

How to make chickpea salad:

2. Wash all vegetables in water. Drain the excess water from lettuce by using a salad spinner or a paper towel. Tear lettuce leaves and roughly chop other veggies into bite-sized pieces.

3. Combine all the veggies and beans in a wide salad mixing bowl.

4. For the salad dressing: Take a small bowl. Combine oil, salt, pepper, and lemon juice. Whisk them well and pour them over the salad. 

5. Here you go, the chickpea vegetable salad | garbanzo salad is ready to be served. Enjoy!
