This Chickpea salad is a quick and easy salad recipe. It is a spicy and scrumptious salad also high in protein, an ideal dish for vegans and vegetarians. It can be served warm or cold, which tastes incredibly flavorful both ways.

This refreshing chole salad takes very little time to prepare and is very satisfying. I would always prefer to get the dried beans from the Indian grocery store, soak them overnight, and then boil them in a pressure cooker. You can also use an instant pot for cooking beans and legumes.

Chana salad is a make-ahead recipe. It can also be made with canned garbanzo beans; make sure you drain the beans and rinse them in water before using them in a salad. However, I don't generally buy canned ones as it contains sodium and preservatives.

If you are short of time, you can soak, cook chickpeas in big batches, freeze in ziplock bags in small quantities, and use them whenever needed. I have tried this method, and it works perfectly.

In fact, we love to have salads every day for lunch. Instead of chickpeas, you can replace them with boiled rajma(kidney bean), mung bean, sprouts, black-eyed bean, etc. In Indian cuisine, boiled chana makes salads, curries for roti and chapati, sundal recipes, etc.

The other names for chickpeas are garbanzo beans/Egyptian peas/Bengal gram in English. And channa/chole in Hindi, vellai Kothukadalai/KondaKadalai in Tamil, vella kadala in Malayalam, mudip chenagulu in Telugu, Kondekadalae/kadale Kaalu in Kannada, motor Kalai in Bengali, kabuli Chana in Gujarati, dhevo Chono in Konkani, kabuli Chane in Marathi, buta kabuli in Oriya.

Channa flour or besan flour is used to prepare savory pancakes, bajji, bonda, pakoras, dhokla, etc. Now, let's get into the chickpea salad recipe.

Ingredients:

Chickpeas/Garbanzo beans - 1 cup boiled
Avocado - 1 small
Red onion - 1 small
Cucumber - 1 small
Tomato - 1
Raw mango - 1/4 cup
Carrot - 1/2 cup grated
Yellow bell pepper/capsicum - 2 tbsp
Red bell pepper/Capsicum - 2tbsp

Herbs, spices, and oil: *(Adjust the below ingredients as per spice preference).

Cilantro - 1/4 cup
Green chili - 1 finely chopped
Peppercorns - As per taste
Salt - 1/2 tsp
Red chili powder - 1/4 tsp
Olive oil - 1/2 tbsp
Lemon - Half

Notes:

1. I used English cucumber; you can use Persian or American cucumber as well.
2. Roma, Vine, or cherry tomatoes works great for this recipe.
3. Sliced green chili can be added for the spice, but I prefer crushed peppercorns.
4. You can use any colored bell peppers/capsicum.
5. Avocado is an optional ingredient.
6. I always use red onion; it works best in salads.
7. I love to use cilantro for garnishing; even parsley, dill leaves, basil works too.
8. For all salads, I either use extra virgin olive oil or avocado oil.
9. Lemon/lime juice can be squeezed for a tangy flavor. Ever amchoor/mango powder works.
10. Add your favorite cheese if you wish.
11. Lettuce, boiled potatoes, zucchini, spring mix, spinach can be added as well.
12. This salad can be made with Kala chana, also known as brown chickpeas.
13. You can use canned garbanzo/chickpeas for this salad recipe.

How to pressure cook chickpeas:

1. Soak the dried chickpeas overnight in room temperature water.

2. Next day, pressure cook the chickpeas with enough salt and water for 15 to 20 mins.

3. Once the pressure is released, remove boiled chickpeas from the cooker and drain the excess water using a strainer. Keep it aside.

How to make chickpea salad:


1. Clean and wash veggies in water. Roughly chop the veggies into bite-sized pieces.

2. Toss the tomato, avocado, red & yellow bell peppers, cucumber, red onion, mango, carrot, cilantro, olive oil, lemon juice, chilies, etc.

3. Put the boiled chickpeas into the salad bowl.

4. Gently combine all the veggies and chickpeas with a spatula.
