Kosambari is a healthy and tasty vegetable salad. Hesaru bele means yellow moong dal in Kannada. Kosambari is also called kosumalli in Tamil and koshambari or koshimbir in Hindi. We can also say carrot lentil salad.

Carrot Kosambari is a very popular South Indian salad. It is a refreshing and nutritious salad that is prepared especially during festivals like Rama Navami, Ganesh Chaturthi, Gowri pooja, Navaratri, and wedding feasts.

I love to have this kosambari as a mid-morning snack, it is tasty and scrumptious as well. Raw vegetables are alkaline in nature, which are packed with nutrients, vitamins, and minerals, so you need not wait for special occasions to make this carrot kosumalli.

It is a simple recipe and easy to prepare as well. Carrot moong dal salad has a mild spice level and nutty flavor. Additionally, the kosumalli is tempered/ seasoned with mustard seeds, green or red chilis, curry leaves, and hing which gives a nice aroma to this salad, so do not skip the seasoning part. 

Further, moong dal should be soaked in water for a minimum of one hour, it is better if you soak them for a longer time. Kosumalli can be prepared with vegetables like southekayi/cucumber, cabbage, capsicum, beetroot, sweet corn, radish, etc. You can also soak the moong dal ahead of time and store it in the fridge for a quick salad preparation!

Kosambari Ingredients:


Carrot - 2 big
Coconut - 2 tbsp
Moong dal - 2 tbsp
Green chili - 1 to 2
Lemon - half
Salt - As per taste
Cilantro - 4 sprigs
Ginger - 1-inch grated - optional

To temper | season:

Oil - 1 tbsp
Mustard seeds - 2 tsp
Curry leaves - 5
Hing - 2 pinches


How to make kosambari:


1. Wash and soak moong dal in water for 2 hours. In the meantime, shred carrots & coconut. Drain the water and keep the veggies and moong dal ready.

2. Take a salad bowl and put shredded carrot & coconut, finely chopped cilantro, green chili. Finally soaked moong dal.

3. Add salt for taste and gently combine the ingredients.

4. Take a small pan and keep it on medium flame. Pour oil, once it is hot, add mustard seeds and let it crackle. Then add some curry leaves and hing/asafoetida. Switch off the flame. Let it cool down.

5. Pour the seasoning over the salad. Give it a good mix. Finally, squeeze some lemon juice and garnish it with cilantro. Let it rest for 15 mins.

6. Carrot moong dal salad or Hesaru Bele Carrot Kosambari is ready to be served. Enjoy the salad!
