Cucumber kosambari | Hesaru bele southekayi kosambari | Vellarikka Kosumalli | Cucumber moong dal salad with detailed step-by-step photos.
It is a traditional recipe prepared for special occasions and festivals in the southern part of India. It is a healthy salad and has a mild spice and tangy flavored kosambari. Cucumber is my favorite vegetable so I often prepare this salad at home. It is quite easy and can be prepared in a jiffy. So let's get started!

1. Cucumber - 1 big
2. Yellow moong dal - 3 tbsp
3. Coconut - 2 tbsp shredded
4. Ginger - 1-inch piece grated
5. Cilantro - 5 sprigs
6. Salt - As per taste
7. Lemon juice- 1 tbsp
For Seasoning:
1. Oil - 1 tbsp
2. Mustard seeds - 1 tsp
3. Green chilis - 1
4. Red chili - 1
5. Curry leaves - 2 sprigs
6. Asafoetida - 2 pinches

Preparation:
1. Wash and soak the moong dal in hot water for 2 hours or soak them overnight as per your convenience. Drain the water and keep the soaked dal aside.
Procedure:
1. Dice the cucumber into cube size. Take a large salad bowl, add the chopped cucumber, and soaked moong dal.
4. Pour the seasoning over the salad.
5. Add some grated ginger and grated coconut. Give it a nice mix using a ladle.
6. Finally, add some salt and squeeze half a lemon over the salad. Garnish it with cilantro/coriander leaves. Keep it covered and rest the salad for 10 to 15 minutes and then serve.
