Kosumalli is a typical South Indian-style salad recipe. This salad is a blend of assorted vegetables, soaked lentils, and finally tempered with spices. It is a perfect dish to make if you want a protein-rich lunch salad.
Pasi paruppu means yellow moong dal in Tamil. Kosumalli is also called Kosambari in Kannada and Koshimbir in Marathi.
This spiced lentil salad recipe is nutritious and flavorful. It is mainly prepared during Indian festivals such as Ram Navami, Navaratri, and Ganesh Chathurthi. I often love to make this kosumalli at home.
Kosumalli salad is usually served as a side dish on special occasions like South Indian weddings, parties, etc. It can also be served as a quick snack for your kids in the evening. This recipe can be easily modified with any of your favorite vegetables. Alright, now let's get started!

Ingredients for kosumalli recipe:
1. Yellow Moong dal - half-cup soaked.
2. Carrot - half cup grated.
3. Cucumber - half-cup cubed.
4. Green/Raw mango - half cup grated.
5. Capsicum/Bell pepper - 1/4 cup finely chopped.
6. Coconut - 1/4 cup grated.
7. Salt - As per taste.
8. Cilantro/coriander leaves - 1/4 cup chopped.
9. Ginger - 1 tbsp grated.
10. Lemon - half

7. Salt - As per taste.

9. Ginger - 1 tbsp grated.

(Note: Veggies like cabbage, zucchini, green gram sprouts, pomegranate kernels, and radish can be included).
For Seasoning:
1. Mustard seeds - 1 tsp.
2. green chili - 1.
3. Red chili - 1.
4. Asafoetida / Hing - 2 pinches

How to make kosumalli:
1. Firstly, soak yellow moong dal in water for 2 hours and drain the water completely using a strainer. In the meantime, chop and grate the vegetables as per your choice. (Note: Moong dal can be soaked overnight too).
2. Secondly, take a salad bowl and add soaked moong dal along with carrot, cucumber, mango, capsicum, ginger, coconut, and cilantro.

3. Thirdly, combine the veggies and dal gently using a spatula.
4. Heat a small pan over a medium flame.
Pour a tsp of oil, add mustard seeds and let it crackle.
Then add chopped or slit green chili and red chili, hing, and curry leaves.
Turn off the flame and let the seasoning cool down.
5. Pour the seasoning over the salad and gently mix it. Finally, squeeze some lemon and let it rest for 10 mins.
