Looking for a salad that is healthy and tasty at the same time? Here it is, I made this salad last week for the Ram Navami festival. The moong dal kosambari or pasi paruppu kosumalli or moong dal salad is a mix of colorful vegetables combined with soaked moong dal.

It is a nutritious and scrumptious salad that is mainly prepared during Ram Navami, Navaratri, Ganesh Chathurthi festivals, and on special occasions like South Indian weddings, etc. 

You can choose any of your favorite vegetables in this moong dal kosambari salad. It can also be served as an after-school snack for your kids in the evening. Now, let's get into the recipe.


Recipe - Moong Dal Kosambari | Pasi Paruppu Kosumalli | Moong Dal Vegetable Salad.

Ingredients for kosambari or kosumalli:


1. Yellow Moong dal - half-cup soaked.
2. Carrot - half cup grated.
3. Cucumber - half-cup cubed.
4. Green Mango - half cup grated.
5. Capsicum / Bell pepper - 1/4 cup finely chopped.
6. Coconut - 1/4 cup grated.
7. Salt - As per taste.
8. Cilantro/coriander leaves - 5 sprigs.
9. Ginger - 1 tbsp grated
10. Lemon - half / 1 tbsp

(Note: Veggies like cabbage, zucchini, green gram sprouts, pomegranate kernels, radish can be included).

For Seasoning:


1. Mustard seeds - 1 tsp.
2. green chili - 1.
3. Red chili - 1.
4. Asafoetida / Hing - 2 pinches
5. Curry leaves - 6

How to prepare Moong Dal Kosambari:


1. Soak moong dal in water for 2 hours. Chop or grate the vegetables as per your choice. (Note: Moong dal can be soaked overnight too).

2. Take a salad bowl and add soaked moong dal, carrot, cucumber, mango, capsicum, ginger, coconut, cilantro.

3. Combine the veggies and dal gently using a spatula.

4. Heat a small pan on a medium flame. Pour oil, add mustard seeds and let it crackle and then add chopped or slit green chili and red chili, hing, and curry leaves. Turn off the flame and let the seasoning cool down.

5. Pour the seasoning over the salad and gently mix it and finally squeeze some lemon over the salad.
