(Poriyal means dry curry in Tamil). This dish goes well with roti, rasam, sambar, curd rice, and a bowl of variety rice like lemon rice, paruppu podi rice, etc.

Both cabbage and carrots are packed with vitamins and minerals, also have a look at the health benefits of these veggies which are given below separately. To make this carrot cabbage poriyal even more nutritious, you can even include vegetables like green beans and green peas as well. It would look colorful and tastes delicious too. This combo is called a tri-color stir fry.

This side dish is also served in many South Indian weddings and parties. The cabbage carrot stir fry makes a wholesome meal when you have it with roti and dal subzi. It is quite easy to prepare and requires less time. Now, let's get into the recipe!

Ingredients:


Cabbage - 1 cup shredded or half cabbage
Carrot -  1 cup chopped or 2 big
Coconut - 2 tbsp shredded
Curry leaves - 2 sprigs chopped
Salt - As per taste
Water - 50 ml

For Seasoning:

Oil - 1 tbsp
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Channa dal - 1 tsp
Green Chili - 1
Red chili - 1
Curry leaves - 1 sprig
Asafoetida / Hing - 2 pinches


How to make carrot cabbage stir fry:



1. Wash cabbage and remove the outer layer and shred it finely. Peel the carrot skin and chop it finely using a knife or a food processor.

2. Heat a pan on a medium flame. Pour oil then add mustard seeds and let it crackle. Add urad and channa dal, broken red chili, slit green chili, asafoetida, and finally put some torn curry leaves.

3. Now add the chopped cabbage and carrot into the pan. Give it a nice mix and saute for a few minutes.

4. After sauteing, the veggies start to shrink in size.

5. Add required salt and saute for a minute.

6. Pour some water and cover it with a lid.

7. Let it cook on a medium flame. This takes around 8 to 10 minutes.

8. Turn off the flame once it is done and garnish it with some freshly grated coconut and chopped cilantro/coriander leaves.

Here you go, the cabbage carrot poriyal or stir fry is ready to be served with hot steamed rice and ghee smeared roti.
