Sweet Potato Fry | Sakkaravalli Kizhangu Varuval | Sweet Potato Varuval with detailed stepwise photos. I had to stock up a lot of potatoes during this quarantine period since it stays good for a longer period of time when compared to green veggies.

In San Diego, we get different varieties of potatoes including orange and purple colored sweet potatoes. Sweet potato is also known as sakkaravalli kizhangu in Tamil, sihi genasu in Kannada, chilakada dumpa in Telugu, and shakarakand in Hindi.

In the US, sweet potatoes are often called "Yams". Sweet potatoes are very high in Vitamin A and it is rich in fiber, carbs, Vitamin B6, and Vitamin C. I have mentioned other health benefits in detail, you can find them at the bottom of the recipe. 

Pan-fried Sweet potatoes are slightly healthier than the deep-fried potatoes in oil. I often prepare this sweet potato fry or sakkaravalli kizhangu varuval in our home and it tastes best with rasam, sambar, thayir sadham (curd rice), lemon rice, etc. It is a tasty and low-calorie recipe. so let's get started!


Recipe - Sweet Potato Fry | Sakkaravalli Kizhangu Varuval | Pan Fried Sweet Potato Fry

Serves - 2 to 4

Ingredients: (Serves 4)

1. Sweet Potato - 2 big
2. Oil - 1 to 2 tbsp
3. Red chili powder - 2 tsp
4. Coriander powder - 2 tsp
5. Turmeric powder - 1/4 tsp
6. Salt - 1 tsp or As per taste

Procedure:


1. Wash, peel the skin of potatoes, and dice them into cube size. Keep it aside. Take a pan and pour 2 tbsp oil. Add the spice powders as per your spice level (red chili, coriander, turmeric) and salt. (Note: Do not switch on the flame in this step).

2. Mix the spice powders with oil using a spatula.

3. Add the diced sweet potatoes.

4. Coat all the sweet potatoes nicely with spice oil. Then switch on the flame and let it cook on a low medium flame. (Note: Do not cover it with lid).

6. After 5 minutes the sweet potatoes starts to shrink in size.

7. Saute the sweet potatoes in between to cook evenly.




8. Sweet potatoes turn brown after 15 minutes or so.

9. Let it brown nicely and turn off the flame. (Note: The entire slow pan-frying process took 25 to 30 minutes for two large potatoes).

Sweet Potato fry / Sakkaravalli kizhangu varuval is ready to be served as a side dish. You can even eat as such, it tastes good.
