incredibly nutritious, colorful, and super refreshing. It is a perfect salad bowl to brighten up your day!!!

Mixed bean salad is a blend of 9 different beans along with
diced veggies. This salad is packed with protein, complex carbs,
fiber, vitamins, and minerals. It is pretty filling, so it can be
eaten as a side or a meal by itself.
We love to consume a lot of beans and legumes as they are rich in
antioxidants, fiber, protein, B vitamins, iron. In fact, beans are the
common ingredients in my pantry. They are healthy, versatile, and readily
available in markets. So I make sure we include them at least twice a week
in a salad, sundal, or subzi form.

Bean salad also makes a perfect food for picnics, parties, and
potlucks. This spicy salad is loaded with fresh flavors from crunchy raw
veggies, seasonings, and herbs.
I generally do not buy canned beans as they contain added preservatives and sodium. So I
prefer to get dried beans from the shop, soak them overnight in water, and
use them the next day. It doesn't take much time. In fact, you can even soak
beans in advance and store them in the freezer, and pressure cook when the
recipe calls for.

Once I make the salad, I prefer to refrigerate it for a day or two and add
the salt and spices while serving. If you don't like a cold bean salad, you may remove
the bean salad from the refrigerator, bring it to room temperature, and add
any of your favorite dressings.

Mixed bean salad ingredients:
Mixed beans - 1 cup boiled
Red onion - 1/4 cup
Tomato - 1/4 cup
Carrot - 1/2
Bell pepper/Capsicum - 1/4 cup
Cucumber - 1/2 cup
Raw mango - 1/2 cup
Cilantro/coriander leaves - 1/4 cup
Pomegranate kernels - 2 tbsp
Red chili powder - 1/2 tsp
Chaat masala - 1/4 tsp
Salt - 1 tsp
Olive oil - 5 ml/1 tsp
Notes:
1. You can use any type of beans and veggies.
2. Adjust salt and spice as per taste.
3. You can add amchoor powder if raw mango is not available.
How to make mixed bean salad:
1. Firstly, rinse the dry mixed beans/navadhanya mix in water several times.

2. Secondly, soak the beans for 8 hrs or overnight in room temperature
water.

3. Thirdly, after soaking, rinse the beans again and pressure cook for 10 to
15 min. Make sure not to overcook.

4. In the meantime, wash and dice/grate the veggies as per choice.

5. Once the pressure is released, take the boiled beans out of the cooker
and Separate the beans using a strainer. (You may use the boiled bean water
for making rasam).

6. Now, add the beans to a chopped veggie bowl.

7. Gently combine the ingredients and add the required salt, spices,
oil, and give it a good mix.

8. Serve the mixed bean salad for lunch.
