Beans poriyal is a simple and flavorful side dish recipe that calls for fresh green beans, spices, curry leaves, coriander leaves, and coconut. Poriyal is a Tamil word for dry vegetable curry.

It is usually prepared with freshly chopped veggies tossed in spice oil seasoning and cooked until it becomes tender. Then finally, it is garnished with grated coconut, an optional ingredient.

In Tamil Nadu-style poriyal recipes, freshly grated coconut is added at the end to make it more aromatic and appetizing. Additionally, powdered spices can be added for an extra kick.

Poriyal is a traditional South Indian stir fry recipe that goes well with dal, sambar, rasam, and curd rice. It can be eaten with roti and chapati as well. Poriyal makes a great addition to South Indian thali meals.

Poriyal is a healthy, savory, and tasty recipe. It is called palya in Kannada, thoran in Malayalam, and vepudu in Telugu.

In fact, poriyal can be made with different veggies like beans, carrots, cabbage, beetroot, broccoli, long beans, cauliflower, peas, okra, bitter gourd, potato, and so on.

Ingredients for beans stir fry:

1. Green beans - 250 gms
2. Coconut - 2 tbsp grated 
3. Cilantro/Coriander leaves - 5 sprigs
4. Salt - 1 tsp/As per taste
5. Water - 1/2 cup
6. Turmeric powder - 1/4 tsp optional

For seasoning:

1. Coconut oil - 1 tbsp
2. Mustard seeds - 1 tsp
3. Channa dal - 1 tsp
4. Urad dal - 1 tsp
5. Curry leaves - 10
6. Green chili - 2 
7. Red dried chili - 2
8. Asafoetida/Hing - 2 pinches

Tips:

1. Use only fresh, crisp, and tender green beans. Frozen beans don't work for this recipe.
2. Adjust green and red chilies as per spice.
3. Coconut is an optional ingredient. You can use either fresh or frozen coconut.
4. Do not store the beans poriyal for more than a day if you add coconut.
5. You may use any variety of cooking oil.

How to make beans stir fry:

1. Firstly, rinse the green beans a few times in water and drain the water completely.
2. Secondly, trim the edges of the beans and chop them into quarter-inch pieces.
3. Thirdly, heat coconut oil in a Kadai or pan. Temper mustard seeds, then roast channa dal and urad dal on a low flame until golden brown. Toss slit green chili, red chili, curry leaves, and asafoetida.
4. Add the chopped green beans.
5. Saute for a minute and add salt.
6. Pour half a cup of water.
7. Cover the pan with a lid and simmer on low heat until the french beans are cooked. Saute in between and pour more water if required.
8. Once the beans are cooked, the water dries up completely. Then add the grated coconut. Give it a nice mix and turn off the heat. Garnish the beans poriyal with cilantro/coriander leaves.
9. Serve the french beans poriyal with dal rice, sambar, rasam, and curd rice.

How to make beans poriyal with stepwise photos:
