Carrot beans poriyal recipe | beans carrot poriyal | carrot beans palya is a simple and easy South Indian style side dish recipe. It is prepared from green beans, carrot, coconut, and spices.

Carrot beans palya is a tasty side dish for rasam, sambar, and curd rice. Poriyal means stir fry in Tamil, Palya in Kannada, Carrot beans vepudu in Telugu, and carrot beans thoran in Malayalam.

Carrot beans stir fry is quite a common side dish in the Southern part of India. It is more like a dry curry which can also be consumed with roti and parathas. This recipe can be prepared without coconut as well. Coconut is added to enhance the flavor. You can even make bread sandwiches and vegetable cutlets with the leftover curry.

Carrot beans poriyal Ingredients:

  1. Green Beans - 500gms
  2. Carrots - 2 big
  3. Cilantro - 2 tbsp chopped
  4. Coconut - 2 tbsp shredded
  5. Water - 100 ml
  6. Salt - As per taste
  7. Sugar - A pinch

Seasoning Ingredients:

  1. Oil - 1 Tbsp
  2. Mustard seeds - 1 tsp
  3. Urad dal - 2 tsp
  4. Channa dal - 2 tsp
  5. Green chili - 1
  6. Red Chilli - 2
  7. Curry leaves - 2 sprigs
  8. Asafoetida / Hing - 1/2 tsp

How to make carrot beans poriyal?


1. Take a wide thick bottomed pan or Kadai. Keep it on a medium flame and wait until it gets hot and pour a tbsp of oil for seasoning.

2. Add mustard seeds once the oil gets heated up. When the seeds splutter, add urad, channa dal, chilies, curry leaves, and hing.

3. Now put the chopped beans and carrots. 

4. Saute for 2 to 3 minutes. Then, add the required quantity of salt and a pinch of sugar. (Note: Sugar is added just to preserve the natural green color. It is optional). 

5. Add water and mix it well. 

6. Close it with a lid. Keep it on medium flame until it becomes soft. This process takes around 15 minutes.

7. Add coconut and saute for a minute. Switch off the flame immediately. (Note: Do not cook the curry for a long time after adding coconut). 

8. Garnish with cilantro.

 5. Add water and mix it well.

5. Close it with lid. Keep it on medium flame until it becomes soft. This process takes around 15 minutes.

6. Add coconut and saute for a minute. Switch off the flame immediately. (Note: Do not cook the curry for a long time after adding coconut).
