Red cabbage poriyal is a popular South Indian style purple cabbage stir fry. It is a healthy and tasty side dish with dal rice, phulka, and roti. I often make this red cabbage curry at home. It is quite easy and similar to a green cabbage curry. It also takes very little time to prepare.

In most South Indian poriyal recipes, grated coconut is usually added to enhance nutrition and taste. But it is optional; make sure you don't overcook the veggies as it gets mushy and soggy.

Red Cabbage is also known as purple Cabbage because of its color. I usually add lemon juice to preserve the purple hue as it turns bluish in color after cooking. 
Red Cabbage is a versatile vegetable; it can be used in many recipes like salad, veggie stir-fries, fried rice, pulav, etc.

Cabbage is called muttaikose in Tamil, muttakose in Malayalam, Gos/kosu in Telugu, kosu/ele kosu in Kannada, bandh gobi/Patta gobi in Hindi, bandha kopee in Bengali, Kobi in Gujarati, Pan Kobi in Marathi, Patra Kobi/bandha Kopee in Oriya, gobi in Punjabi, band in Kashmiri. And poriyal/thoran/palya/vepudu means dry curry in Indian languages.

Ingredients for red cabbage curry/poriyal:

1. Red cabbage - 1 small chopped
2. Shredded coconut - 2 tbsp optional
3. Cilantro / Coriander leaves - 5 sprigs
4. Salt - 1 tsp / As per taste
5. Water - 30 ml or 1/4 cup
6. Turmeric powder - 1/4 tsp optional

For seasoning:

1. Oil - 1 tbsp
2. Mustard seeds - 1 to 2 tsp
3. Channa dal - 1 tsp
4. Urad dal - 1 tsp
5. Curry leaves - 10
6. Green chili - 1 to 2
7. Red dried chili - 1 to 2
8. Asafoetida - 2 pinches

Tips:

1. Red cabbage can be replaced with green cabbage as well.
2. Grated coconut can be added at the end to enhance the taste.
3. Green peas can be added along with red cabbage.
4. Adjust chilies as per taste.
5. Lemon juice can be added at the end to preserve the red/purple color.
6. Do not overcook the cabbage.

How to make red cabbage curry:


1. Wash and chop cabbage thinly.

2. Heat a pan on a medium flame. Pour 1 tbsp oil, add mustard seeds and let it crackle; add channa dal and urad dal—fry for a minute or two. (Note: Fry until the dal turns golden brown but not deep brown).

3. Add slit green chili, broken dried red chili, curry leaves, and hing/asafoetida.

4. Now add the cabbage and green peas. (Note: Both fresh peas and frozen peas work).

5. Saute for a few minutes or until the raw smell leaves, and the veggies reduce in size.

6. Now add the required salt and turmeric powder if you like it. Saute for a minute.

7. Add around 30 ml of water. Mix well and keep the lid on. Let it cook for 5 to 10 minutes on a medium flame.

8. Add some fresh shredded coconut and give it a mix and turn off the flame.

9. Garnish it with cilantro/coriander leaves.

10. Hot and light spicy cabbage peas poriyal or muttaikose poriyal or cabbage stir fry is ready to be served with rice, roti, etc.


How to make red cabbage curry with step-by-step pictures:


1. Wash the red cabbage well in water and chop it into 4 parts.

2. Shred the cabbage using a knife or food processor.

3. Heat a pan on a medium flame. Pour 1 tbsp oil, add mustard seeds and let it crackle; add channa dal and urad dal, fry for a minute or two. (Note: Fry until the dal turns golden brown but not deep brown).

4. Add slit green chili, broken dried red chili, curry leaves, and hing/asafoetida.

5. Now add the shredded cabbage.

6. Give it a nice mix and saute for a few minutes.

7. Now add the required salt. Give it a nice mix.

8. Add around 30 ml of water. Mix it well.

9. Saute and keep the lid on. Let it cook for 5 to 10 minutes on a medium flame.

10. Open the lid and check if it is done.

11. Add some freshly grated coconut and saute for a minute and turn off the flame. (This step is optional).

12. Garnish it with cilantro/coriander leaves.
