This green salad has a sweet and savory combo due to the addition of pepper, dates, raisins, and nuts. I love to accompany this salad with dal/sambar rice. This is a perfect summer salad recipe. It is super fresh, light, and healthy as well. This is also a gluten-free and vegan salad.

This mixed vegetable salad recipe calls for lettuce, greens, spinach, avocado, cucumber, tomato, and onion. You may also include carrots, capsicum/bell peppers, cabbage, green peas, corn, sweet potato, etc. In fact, these veggies would make an excellent addition to this chopped salad recipe.

Ingredients:

1. Lettuce - 1 bunch
2. Greens - 1/2 bunch
3. Avocado - 1 medium
4. Tomato - 1 big
5. Onion - 1 small 
6. Cucumber - 1 medium
7. Walnuts - 1/4 cup chopped
8. Pecans - 2 tbsp chopped
9. Dates - 2 
10. Raisins - 15
11. Pomegranate kernels - 1/4 cup 

Salad dressing:

1. Olive oil - 1 tbsp
2. Lemon juice - 3 tbsp
3. Salt - As per taste
4. Pepper - 1/2 tsp

How to make the mixed veg salad:


1. Firstly, add chopped lettuce and leafy mixed greens in a large mixing bowl.



2. Secondly, chop the cucumber into bite-sized pieces. You may have any variety, such as English cucumber, Persian cucumber, etc.

3. Thirdly, slice the tomato vertically. You can add cherry tomatoes as well.


4. Slice the red onion and chop the avocado into bite-sized pieces.

5. Put the chopped avocado in a mixing bowl.


6. Roughly chop the walnuts, pecans, raisins, and dates. You may add almonds, hazelnuts, sunflower seeds, pumpkin seeds to increase the protein content.

7. Sprinkle the nuts over the salad.

8. For salad dressing, whisk the olive oil, lemon/lime juice, salt, and pepper in a bowl.

9. Finally, place the required amount of salad on a plate and pour the lemony olive oil dressing over the salad.
