Carrot poriyal is one of the popular South Indian style poriyal recipe. It pairs well with rice, roti, and tastes delicious with sambar, dal tadka, rasam, and curd rice as well.

This carrot fry is a no onion, no garlic, no masala, and a vegan recipe. It is also served at weddings and parties. This poriyal makes a wholesome meal when you have it along with roti and dal sabzi.

Carrot palya is quite easy to prepare and doesn't take much time. Adding coconut to this poriyal is an optional ingredient, it is usually added to enhance the flavor that makes the entire curry tasty and aromatic.

Sometimes I do skip coconut in my curry. In fact, most of the South Indian poriyal recipes can be made without coconut, onion, and garlic too.

This carrot fry is such a simple and healthy side dish. Now, let's learn how to make this side dish.

Carrot fry Ingredients:


1. Carrot - 3 chopped
2. Oil - 1 tbsp
3. Mustard seeds - 1 tsp
4. Cumin seeds - 3/4 tsp
5. Channa dal - 1/2 tsp
6. Urad dal - 1/2 tsp
7. Curry leaves - 1 sprig
8. Green chili - 1
9. Red chili - 1
10. Hing/Asafoetida - A pinch
11. Water - 2 to 3 tbsp
12. Coconut - 2 tbsp shredded
13. Cilantro/Coriander leaves - 3 twigs

How to make carrot palya:


1. Heat oil in a pan over a medium flame. Temper seeds, dals, curry leaves, chili, hing.

2. Toss the chopped carrots.

3. Saute for a few mins and add the required salt.

4. Pour enough water and mix well.

5. Cover it with a lid and let it cook for 10 to 15 mins over medium heat.

6. Add shredded coconut.

7. Saute for a minute or two and garnish cilantro. Switch off the flame once it is done.

8. Spicy carrot poriyal is ready to serve with roti, rice, etc.

How to make carrot palya recipe with stepwise images:
