Potato fry is a spicy side dish that is simple and easy to prepare. This recipe requires only a few basic ingredients such as boiled potatoes, spice powders, and a tablespoon of oil. That's all you need to prepare this yummy potato roast recipe.
It is a tasty side dish that is crispy on the outside and soft on the inside. This hot and spicy potato fry would fill your entire house with aromatic flavors. It is a vegan and gluten-free recipe.
For this recipe, you can use both freshly boiled potatoes or the leftover ones as well. The urulai kizhangu roast tastes delicious with all rice varieties like lemon rice, tomato rice, coconut rice, rasam, curd rice, Gujarati kadhi, roti, puri, etc.
This potato roast is shallowly fried, so it can be eaten whenever you have cravings for potato chips, fries, etc. Also, this is a versatile side dish, it can be served as a starter, appetizer, or as a side dish for rice as well.

Our family is a huge fan of potatoes so I make this side dish often at home. The potato fry with rasam and curd rice combination was my childhood favorite lunch box food, it just brings back a lot of nostalgic school memories. I usually have a bowl of hot toor dal rice that is topped up with flavorful ghee and urulai kizhangu roast on the side, wah-wah, what a blissful combo!! I can just live with paruppu sadam all my life. We make this potato fry in large quantities, I and my hubby gobble up one by one as a snack. It is so tasty!!!

Ingredients for potato fry recipe:
2. Oil - 1 to 2 tbsp
3. Red chili powder - 1.5 tsp
4. Coriander powder - 1.5 to 2 tsp
5. Turmeric powder - 1/4 tsp
6. Salt - 1 tsp/as per taste.
How to make south Indian potato roast:
2. Pressure cook the potatoes for 15 min. (Note: You can even cook the potatoes in a microwave as well).
3. Take out the potatoes once the pressure is released.
4. Let it cool down a bit and chop the potatoes into cube size and keep it ready.
5. Take a pan or Kadai. Pour oil and add salt, spice powders - red chili, coriander, turmeric. (Note: Do not switch on the flame at this step).
6. Mix the oil and spices well.
7. Add the cubed potatoes into the spice oil.
8. Coat all the potatoes nicely with the spice oil and switch on the flame.
9. Let it cook on a low medium flame. Stir the potatoes gently for even cooking. (Note: Do not roast it on high flame).
10. Now the potatoes slightly roasted and let them cook.
11. Switch off the flame once the potatoes are well roasted on all the sides.
12. Serve it hot with Gujarati Kadhi, rasam, sambar, etc.
