Our family is a huge fan of potatoes so I make this side dish often at home. The potato fry with rasam and curd rice combination was my childhood favorite lunch box food, it just brings back a lot of nostalgic school memories. I usually have a bowl of hot toor dal rice that is topped up with flavorful ghee and urulai kizhangu roast on the side, wah-wah, what a blissful combo!! I can just live with paruppu sadam all my life. We make this potato fry in large quantities, I and my hubby gobble up one by one as a snack. It is so tasty!!!

The Potato roast/fry with rasam rice is the most simple and comforting meal on any given day. The potato itself a versatile vegetable so you can make several lip-smacking dishes and the unique thing about the potato is, it can absorb all kinds of aromatic Indian spice flavors and takes the dish to next level.

Furthermore, the raw potatoes need no refrigeration so they come to the rescue whenever I have no other veggies or greens to cook. Besides, I always keep a bunch of potatoes at home for an instant quick recipe to prepare when I'm in rush.
