It is a South Indian style Okra stir fry recipe. Okra poriyal is a simple and basic poriyal recipe where most Tamilians prepare regularly for lunch and dinner.

Vendakkai fry is a popular side dish that goes well with rice and roti. It tastes so delicious with sambar, dal tadka, rasam, and curd rice as well. Okra curry is a versatile side dish, it also pairs well with Indian variety rice like lemon rice, tamarind rice, coconut rice, ghee rice, jeera rice, etc.

Okra is called Lady's finger in English, Vendakkai in Tamil, Bhindi in Hindi, Bendakaya in Telugu, Bendekayi in Kannada, Vendakka in Malayalam. Poriyal is a Tamil word, it means stir-fry or sauteed vegetables.

Bhindi fry recipes can be made in numerous ways. You can add onion, tomatoes, grated coconut, dal, etc. Sometimes, I love to garnish my okra curry with roasted & crushed peanuts for the crunchy taste, it also enhances the flavor of the curry. Try it once for a change, I'm sure you will get addicted to it!

My version of Lady's finger poriyal is a vegan and no onion no garlic recipe. Plus, it is super healthy and a perfect side dish to pack for your kid's lunch box. This is my mom's recipe and I remember she used to pack this spicy bendakayi palya along with bele saaru anna/paruppu sadam for my school lunch box. The wholesome combo is always my favorite and very comforting too. 
(Sadam means steamed/boiled rice in Tamil and Anna in Kannada).

Bhindi fry is a tasty and scrumptious curry. Moreover, this is super easy to make and takes very little time to prepare. South Indian okra curry recipes include vendakkai kootu, vendakkai sambar, vendakkai thayir pachadi, vendakkai vathal, vendakkai masala, bendakayi gojju, etc. I will try to post other vendakkai recipes as and when I prepare them.

How to select okra, washing procedure, and eliminate the slime. 


1. Always select the okra pods which are small and crisp, and avoid the pods that have brown spots, dull green, or blemishes.

2. Wash the okra in clean water and pat dry thoroughly using a kitchen cloth or paper towel.

3. Make sure the cutting board, knife, and pods are completely dry before you chop, I usually do this to eliminate the stickiness/slime from the okra. Also, you will have to wipe the knife in between to get rid of the slime.

4. Use a wide heavy-bottomed pan for making the curry. Do not overcrowd the pan and frying should always be done on medium or high heat. Never ever cook the okra on low heat. Longer cooking time also helps to reduce the slime.

5. Add little water once the okra is half cooked and do not cover it with a lid.

6. Some people use vinegar or curd/yogurt to get rid of the slime. But, I'm not sure how it works as I have never tried it personally.

Okra fry recipe ingredients:


1. Okra/Vendakkai - 2 cups
2. Oil - 1 tbsp
3. Mustard seeds - 1 tsp
4. Cumin seeds - 1 tsp
5. Channa dal - 1 tsp
6. Urad dal - 1 tsp
7. Curry leaves - 1 sprig
8. Turmeric powder - 1/4 tsp
9. Red chili powder - 1/2 tsp
10. Coriander powder - 1/2 tsp
11. Coconut - 1 tbsp
12. Cilantro/Coriander leaves - 1 tbsp
13. Salt - 1 tsp/ As per taste 
14. Hing/Asafoetida - A pinch
15. Water - 2 to 3 tbsp.

How to make okra curry.


1. Clean and wash the whole okra in water. Pat dry using kitchen cloth or paper towel. Let it air dry for 5 mins. (Note: Never wash chopped okra in water).

2. Now trim the okra edges and chop quarter-inch round pieces. (Note: You can wipe the knife in between with a cloth/paper towel to get rid of the sliminess in okra).

3. Heat a tbsp of oil in the pan over a medium flame. Temper mustard seeds, cumin seeds, and fry channa dal, urad dal until it turns brown and aromatic. Throw in some curry leaves and finally a pinch of asafoetida. 

4. Now add in the chopped okra and give it a quick mix. 

5. Let it cook for 5 mins over a medium flame. (Note: Avoid over sauteeing and do not cover it with a lid).

6. Once it is half done, add the required salt, turmeric powder, red chili powder, and coriander powder for the spice.

7. Give it a nice mix and sprinkle some water, say 2 tbsp, and allow it to cook.  

8. Finally, you can garnish it with some grated coconut if you like and serve it with rice/roti.

How to make okra fry with step by step photos.
