Balehannu rasayana is a delicious sweet kheer made from banana slices, coconut milk, jaggery, and cardamon. Banana rasayana is a quick and easy-to-make dessert. It is a fruit-based instant no-cook dessert.

Bale hannina seehikarane is an authentic dessert recipe from the Udupi, Mangalore, Karavalli regions and a well-known dish in the South Canara districts of Karnataka.

Balehannu is a Kannada word for banana, and Rasayana means essence in Sanskrit. The banana rasayana is usually made during summer in South Canara households. We also make it on fasting days and served as a prasadam/prasad on festival occasions like Rama Navami, Nagara Panchami, Maha Shivaratri, and Ganesh Chaturthi.

The banana rasayana recipe is our family's favorite dessert. We frequently prepare it at home and love to relish it as a side dish with neer dose, poori's, roti, phulkas, chapathi, plain dosa, obbattu, and even idiyappam. I would love to have this as a post-lunch/dinner dessert.

Both balehannu rasayana and mango rasayana are my favorites, and it is served as a side dish for almost all breakfast dishes, along with sambar and chutney in our house. 

Banana payasa is a perfect dessert to make whenever you have over-ripened bananas in hand. It also makes a simple and instant delicacy for satisfying the sweet tooth.

Banana seehikarane is a fruit-based vegan recipe. It is a healthy and nutritious dessert. The ingredients are quite natural, and there is no heating involved to make this dessert. Banana and coconut are easily available, and it's quite calming to the stomach.

If you are looking for any variations, coconut milk can be replaced with cow's milk, and jaggery can also be substituted with sugar. Even bananas can also be replaced with any other fruit such as mango, apple, muskmelon, and ripened jackfruit. You can also add some nuts for a crunchy flavor.

Banana rasayana ingredients:

1. Ripe banana - 2
2. Coconut milk - 1 cup
3. Jaggery - 2 tbsp
4. Elaichi/Cardamom powder - 1 tsp
5. Nuts - Optional

Notes:

1. You can use freshly prepared coconut milk as well as canned ones.
2. Coconut milk can be replaced with cow's milk.
3. Instead of jaggery, you can use sugar, dates syrup, honey.
4. Likewise, you can replace banana with mango, apple, ripened jackfruit, or even with muskmelon.
5. Chopped nuts can be added for a crunchy flavor.
6. Use only ripe bananas for this recipe and avoid the sour ones.
7. It can be served at room temperature or chilled.

How to make bale hannu rasayana:

1. Peel and chop the banana into a bowl.
2. Combine banana, jaggery, and cardamom powder in a bowl.
3. Pour the coconut milk into the banana jaggery mixture.
4. Give it a nice mix and set it aside for 10 minutes for the mixture to assimilate.
5. Serve immediately as kheer or a side dish for poori, roti, chapathi, phulkas, and obbattu.

5. Serve immediately as kheer or a side dish for poori, roti, chapathi, phulkas, and obbattu. You can refrigerate the banana rasayana for 15 mins if you like it. This cannot be stored for a longer time as bananas might change color.
