Spring mix salad is a bright, simple, and flavorful salad made with a blend of different baby greens, tomatoes, cucumber, avocado, onion, walnuts, sunflower seeds, dates, raisins, and drizzled with a lemony olive oil dressing.

Spring green salad is a perfect mix for the spring and summer seasons. It has a combination of various flavors like sweet, salty, bitter, sour, and savory. It is such a refreshing salad. My hubby and I have been craving fresh salads these days as the weather is so warm in San Diego.

I have kept it simple as far as salad dressing, but you can try different flavor combinations. This baby spring mix salad is so easy to make, can be modified to your heart's content. Whenever I want to make a quick and easy salad, this is my go-to recipe.

A big bowl of this spring mix green salad fills me up at lunch. It is also a versatile salad. For added protein, I love to add many different crunchy nuts like walnuts, pecans, slivered almonds, tofu, and sometimes grilled paneer.

Now, let's see what Spring mix is; it is a blend of assorted baby greens, usually made up of 6 to 8 different sorts. That includes baby romaine, baby red leaf lettuce, baby spinach, baby chard, arugula, etc. It's a mix of so many different green leaves, full of vitamins and minerals. It goes well with many different salad dressings. Spring Mix can be found in many U.S. grocery stores.

Spring mix ingredients:

Romaine - 1 cup
Spring mix baby greens - 1 cup
Red onion - 1 small sliced
Cucumber - 1/4
Tomato - 1 small
Avocado - 1/4 cup

Salad toppings: (Your choice).

Walnuts - 12 halves
Sunflower/pumpkin seeds - 1 tsp
Black Raisins - 1 tbsp
Medjool dates - 1 chopped
Cheese - 1 slice

Salad dressing:

Lemon juice - 2 tsp
Olive oil - 1 tbsp
Pepper - 1 tsp crushed
Himalayan Salt - 1/4 tsp/As per taste
For extra spice - Red paprika/Green chilies (optional).

How to make spring salad:


1. In a large bowl, toss the romaine, mixed baby greens, avocado, tomato, sliced onion, cucumber, walnuts, dates, raisins. Set aside.

2. Whisk together the olive oil, salt, crushed pepper, and lemon juice in a small bowl.

3. Pour over the salad mixture and give it a nice mix and serve!
