Kachumber raita is a traditional Indian-style accompaniment recipe made with cucumber, tomato, onion, dahi/yogurt, and spices. Raita is nothing but fresh chopped veggies added to the well-whisked dahi; it is similar to a dip where it is consumed with paratha, pulao, biryani, and fried rice.

Kachumber salad raita is a nutritious and flavorful side dish prepared all over India. Raita is loaded with protein, fiber, good fats, vitamins, and minerals. Besides, it is an easy and straightforward recipe to make, and no fancy ingredients are required. Infact, the veggies used in the recipe are basic ones readily available in the kitchen.

I prefer to make raita based on the veggies available at home. Most 
Indian raita recipes are modified easily with mixed veggies like beetroot, carrot, cabbage, cucumber, tomatoes, onion, capsicum, corn, and radish. You can make raita with plain desi dahi or greek yogurt. I always favor full-fat yogurt to make raita, but low or non-fat yogurt works.

Combining yogurt/dahi with fresh veggies has a cooling effect on our bodies. Hence it is an ideal recipe to make on hot summer days. It tastes best when served chilled. Most raita has a combination of sweet, spicy, and tangy flavors. The spices can be easily altered based on one's preference.

Infact, kachumber raita tasted very delicious with masala veg paneer pulao, which I made recently for our weekday lunch. I will soon post the spicy pulav recipe, so stay tuned!

Kachumber raita ingredients:

Full-fat thick curd or yogurt - 1 cup
Milk - 1/4 cup
Chopped red onion - 1/4 cup
Chopped tomato - 1/4 cup
Chopped cucumber - 1/2 cup
Coriander leaves - 1 tbsp
Mint leaves - A few
Lemon - 1 tbsp
Green chili - 1 finely chopped (optional)
Salt to taste

Spice powder:

Red chili powder - A pinch
Cumin or Jeera powder - A pinch
Black pepper powder - A pinch

Tips:

1. Optional veggies - Shredded beetroot, radish, cabbage, carrot, and capsicum can also be added.
2. Spice powders are adjusted as per taste.
3. Fresh curd works best for raita. You can use desi dahi or greek yogurt for raita.
4. Whip the curd nicely for smooth and creamy raita.

How to make kachumber raita:


1. Whisk the dahi/yogurt and milk in a bowl.

2. Toss the chopped veggies, cilantro, and mint leaves in a whisked yogurt.

3. Add the spice powders, lemon juice, and salt to taste.

4. Mix it well and keep it in the refrigerator for 30 minutes.

5. Garnish with finely chopped coriander leaves and serve chilled with pulao, biryani, or roti.
