I make this salad whenever I have lots of apples and carrots in stock. There is no cooking involved, so it is easy and a quick carrot and apple salad. It can be eaten for lunch or as a snack. It was so delicious, we truly enjoyed it!

Ingredients:

Carrot - 1 medium
Apple - 1 large
Date - 2 seedless
Cashewnuts - 15
Pomegranate kernels - 2 tbsp
Cilantro/Coriander leaves - 1 tbsp finely chopped
Salt - 1/4 tsp or As per taste
Pepper powder - 1/4 tsp
Lemon juice - 1 tbsp
Olive oil - 1 tsp

(You may add these optional ingredients if you like).

Raisins - 1 tsp
Walnuts/Pecan/Almonds - 5
Orange juice - 2 tbsp
Honey - 1 tbsp
Green chili - 1 finely chopped
Grated coconut - 1 tbsp

How to make carrot apple salad:


1. Toss the grated carrot, diced apple, chopped dates, and cashews in a bowl.

2. Sprinkle the required amount of salt.
