Cucumber pachadi ingredients:

Cucumber - 1/2 cup cubed
Red onion - 2 tbsp diced
Thick curd/Greek yogurt - 1 cup
Cilantro - 1 tbsp minced
Green chili - 1 minced
Salt - 1/2 tsp
Lemon juice - 1 tbsp
Pomegranate kernels - 1 tbsp optional
Milk - 2 tbsp optional
Mint leaves - 1 tbsp finely chopped

Notes:

1. Raita is usually served cold.
2. Leftover cucumber pachadi can be refrigerated.
3. Tadka/tempering is optional.
4. You can add some grated carrots and tomatoes to mix veg raita.
5. Whisk the curd thoroughly for a smooth and creamy texture.

How to make cucumber raita:


1. Pour the beaten yogurt into a bowl and then add onion.

2. Put the cucumber, green chili, cilantro, lemon juice, and salt.

3. Combine the ingredients with a fork or spoon. Pour some milk if the raita gets thicker consistency.
