We love to have different salads for lunch, and beetroot salad is one of our favorites. Beets have a vibrant pinkish hue that makes a great addition to a vegetable salad.

Beetroot kosambari is easy to make and takes less time. You can either use fresh or boiled beets and peanuts. Both ways, it tastes so delicious. I usually modify the recipe based on the season. I prefer a warm salad in winter and a cold salad in summer.

Beetroot koshimbir is a vegan salad and no onion and no garlic recipe. It packs fiber, protein, complex carbs, vitamins, and minerals. It is a must-try recipe if you like beets.

1. Beetroot mainly consists of water (87%), carbs (8%), and fiber (2–3%).

5. Beetroots have a medium glycemic index score of 61 and a glycemic load of five.

Beetroot salad ingredients:


Beetroot - 1 medium
Peanuts - 1/2 cup
Cilantro - 2 tbsp chopped
Lemon juice - 1 tbsp
Salt - 1/2 tsp/As per taste
Pepper powder - 1/2 tsp or As per taste

How to make beetroot salad:


1. Firstly, boil the peanuts and beetroot in a pressure cooker or an open pan for 15 mins and keep them aside.

2. Secondly, slice the boiled beetroot in half and let it cool down a bit. Roughly mince the cilantro or coriander leaves.

3. Thirdly, shred the beetroot in a grater.

4. Do not squeeze the beets and remove water, if any.

5. Put the grated beets, boiled peanuts, and cilantro in a bowl.

6. Combine well and throw in some salt, pepper powder, and lemon juice. Give it a gentle mix.

8. Optional step: If you like seasoning (tadka/thalipu), the beet koshimbir. Please follow the below procedure.

In a small pan, pour a tsp of oil, toss some mustard seeds and cumin seeds and let it crackle. Then, add urad dal, channa dal, and saute till it becomes aromatic and golden brown; add green/red chilies and hing/asafoetida, and saute for 1 min. Pour the tadka over the beet peanut salad and combine well.

9. Finally, beetroot salad is ready to serve. Enjoy!
