Looking for a vibrant and sweet curry? Here it is...This beetroot stir fry is a nutritious side dish recipe from South Indian cuisine. The recipe calls for steamed beets, coconut, oil, and spices. Poriyal is a Tamil word for dry curry eaten along with sambar, rasam, curd rice, roti, and phulkas.
Poriyals can be prepared with a variety of veggies including okra, carrot, beets, beans, gourd, spinach, etc. Vegetable stir fry or dry curry is called palya in Kannada, thoran in Malayalam, and vepudu in Telugu. Let's get into the recipe!

Beetroot poriyal ingredients:
Beetroot - 300 gms chopped
Turmeric powder - 1/4 tsp
Fresh/Frozen coconut - 2 tbsp grated
Cilantro/Coriander leaves - 5 twigs chopped
Salt - 1 tsp
To season:
Oil - 1 tbsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Urad dal - 1/2 tsp
Channa dal - 1/2 tsp
Green chili - 2
Red chili - 1
Curry leaves - 10
Asafoetida/hing - 1/4 tsp
Tips:
1. Coconut oil gives a nice aroma to dry curry/poriyals.
2. Adjust salt and chilies as per taste.
3. Grated coconut is an optional ingredient, it is usually added at the end to enhance the flavor.
How to make beetroot poriyal:
1. Wash the beetroot and peel the skin with a peeler.
2. Slice the beetroot into half.
3. Chop the beets into small pieces and set them aside.
4. Heat a tbsp of oil in a heavy-bottomed pan; temper the mustard seeds, cumin seeds, urad dal, channa dal, green chili, red chili, curry leaves, and hing/asafoetida.
5. And add the chopped beetroot, and stir fry for a minute until well combined.
6. Sprinkle the salt as per taste.
7. Pour some water say 100 ml.
8. Close it with a lid and let it cook for 15 mins or until the beetroot pieces are softened over a low-medium flame.
9. Check and stir in between and cook until the water dries up.
10. Add some grated coconut.
11. Give it a nice mix and put off the flame.
12. Garnish it with finely chopped cilantro/coriander leaves.
13. Serve Beetroot Poriyal Recipe with rice, and roti for a delicious lunch.
How to make beetroot stir fry with step-by-step photos:
