Dahi boondi raita is a yogurt-based side dish recipe. Boondi raita is a popular North Indian dip made from dahi/yogurt/curd, boondi, herbs, and spices. Raita goes well with vegetable pulao, biryani, roti, chapathi, and parathas.
Boondi raita is an easy and quick recipe to make. In India, boondi is eaten as a savory snack along with coffee/tea and also added to a lot of chaat recipes like pani puri, boondi bhel chat, etc.
Boondi is a tiny fried besan flour puff that is round in shape and has a crispy and crunchy texture. Boondi raita can be made from homemade plain or masala boondi or store-bought boondi as well.

Boondi raita ingredients:
Boondi - 1/2 cup
Hot water - 1 cup
Thick curd/dahi/yogurt - 1 cup
Salt - 1/2 tsp or As per taste
Red chili powder - 1/2 tsp
Roasted Cumin powder - 1/2 tsp
Cilantro/Coriander leaves - 1 tbsp chopped
Sugar - A pinch
Tips:
1. A pinch of black pepper and chat masala can be added to the raita.
2. Adjust salt and spices as per taste.
3. Do not use sour curd.
4. If you like crunchy boondi raita, do not soak it in water. Add boondi directly to the yogurt.
5. Do not soak the boondi for more than 5 minutes to retain its shape.
6. Raita consistency can be adjusted as per taste.
7. You can use plain, salted, or masala boondi.
How to make boondi raita:
1. Firstly, pour a cup of hot water into a bowl.
2. Secondly, add 1 cup of boondi to hot water and let it soak for 5 minutes. Skip this step if you like crunchy boondi raita.
3. After 5 minutes, drain the water and set the boondi aside.
4. Now, add 1 cup of curd/yogurt to a bowl and whisk until it's smooth and creamy.
5. Add 1/2 tsp of red chili, roasted cumin powder, sugar, and salt. You can also add chaat masala and black pepper.
6. Blend the spices and yogurt until it's combined well.
7. Add the drained boondi and chopped coriander leaves to the yogurt.
8. Finally, mix it well and serve the boondi raita along with pulao, biryani, roti, etc.
How to make boondi raita with stepwise photos:
1. Firstly, pour a cup of hot water into a bowl.
2. Secondly, add 1 cup of boondi to hot water and let it soak for 5 minutes. Skip this step if you like crunchy boondi raita.
3. After 5 minutes, drain the water and set the boondi aside.
4. Now, add 1 cup of curd/yogurt to a bowl and whisk until it's smooth and creamy.
5. Add 1/2 tsp of red chili, roasted cumin powder, sugar, and salt. You can also add chaat masala and black pepper.
6. Blend the spices and yogurt until it's combined well.
7. Add the drained boondi and chopped coriander leaves to the yogurt.
8. Finally, gently combine the boondi and curd well.
9. Serve the boondi raita along with pulao, biryani, roti, etc.
