Patta gobi matar recipe is a dry vegetable curry made from cabbage, peas, and spice masala. You can also add onion and tomato as well. It is a basic Punjabi-style side dish recipe.

Bandh gobhi mattar is a healthy and tasty dish that goes well with hot steamed rice, roti, chapati, phulka, dal rice/paruppu sadam, sambar rice, rasam rice, and curd rice. I often make this mildly spiced cabbage green peas sabzi at home. It is quite easy and takes very little time to prepare.

If you have leftover curry, it can be used to make healthy savory sandwiches. I have tried it at home, tastes delicious with butter toasted bread. It can also be packed for lunch boxes and road trips as well.

Cabbage peas stir-fry is a simple and comforting dish. I have added grated coconut to enhance the taste, but it can be prepared without it. Just make sure not to overcook as these veggies get mushy.

This bandh gobi matar is a vegan and gluten-free recipe as well. Cabbage is called Patta gobhi/bandh gobhi in the Hindi language, muttaikose in Tamil. And green peas are called pachai Pattani in Tamil and matar in Hindi. Also, the word sabzi/poriyal/thoran/palya/vepudu means dry curry in Indian languages.

Green peas are one of my favorite veggies; it also pairs well with cabbage, carrot, green beans, cauliflower, broccoli, and potato. Hence, we can make different combinations of Indian dry curries.

Alright, now let's get into the Punjabi style Patta gobi matar nu Shaak recipe.

Recipe - Patta gobhi matar recipe | Band gobi mattar recipe | Cabbage green peas sabzi recipe

Ingredients:

1. Cabbage - 2 cups chopped
2. Frozen green peas - 1/2 cup
3. Onion - 1 optional
4. Tomato - 1 optional
5. Salt - 1 tsp/ As per taste
6. Water 1/4 cup
7. Sugar/Jaggery - 1/4 tsp

To season:

1. Oil - 1 tbsp
2. Mustard seeds - 1 tsp
3. Cumin seeds - 1 tsp
4. Channa dal - 1 tsp
5. Urad dal - 1 tsp
6. Curry leaves - 1 sprig
7. Green chili - 1
8. Red chili - 1

Spices:

1. Red chili powder - 1/2 tsp
2. Coriander powder - 1/2 tsp
3. Turmeric powder - 1/4 tsp
4. Garam masala - 1/4 optional (To add at the end of cooking).

To garnish:

1. Coconut - 2 tbsp grated
2. Cilantro/Coriander leaves - 2 tbsp chopped 

Notes:

1. Chopped onion and tomato are added after tadka/seasoning. I personally do not like it, so I avoided it in this recipe.
2. It is a spicy recipe, so add chilies and spice powder as per taste.
3. Coconut is optional.
4. Sugar/Jaggery is added to balance the flavor.

How to make Patta gobhi matar:


1. Heat 1 tbsp oil in a pan or Kadai over medium-low flame. Splutter mustard seeds first, then cumin seeds, channa dal, and urad dal. Then add chopped curry leaves, green & red chili, ginger & garlic. Saute until their raw smell goes off.

(Optional step)
2. Add 1 chopped onion and saute till they become translucent. Then, add 1 chopped tomato, saute till it becomes soft.

3. Add chopped cabbage/band gobhi/Patta gobhi.

4. Stir and then add 1/2 cup of fresh or frozen green peas/matar.

5. Saute and add 1/4 tsp turmeric powder, pour about 1/4 cup of water, and cover the pan with the lid. 

6. Simmer until the cabbage & peas are cooked.

7. Keep checking in between, and if the water dries up, sprinkle some more water and simmer the sabzi until cooked.

8. Add 1/2 tsp red chili powder, 1/2 tsp coriander powder, 1/4 tsp sugar or jaggery, and salt. Add them as per taste. Mix well and let it cook for few minutes.

9. Once the cabbage and peas are cooked, if there is any moisture in the pan, then simmer the veggies on a low flame till all the moisture is absorbed. 

10. Lastly, add some grated coconut and stir it for a minute.

11. Then garnish the chopped coriander leaves. Turn off the flame.

6. Then, cover the pan with a lid. Simmer until the cabbage & peas are cooked.

7. Keep checking the curry in between, and if the water dries up, sprinkle some more water and simmer the sabzi until it's cooked well.
