Tindora is a tropical plant hailing from the pumpkin family. Tindora stir fry is a crunchy & spicy side dish that goes well with sambar rice, rasam rice, mor kuzhambu, chappathi, etc.

Tindora is also known as Ivy Gourd/Scarlet Gourd in English, Kovakkai in Tamil, Thondekayi in Kannada, Dondakaaya in Telugu, and Tendli in Marathi.

Ingredients:

1. Kovakkai/Tindora - 300 grams
2. Cilantro - 4 sprigs
3. Red chili powder - 1 tsp
4. Coriander powder - 1 tsp
5. Turmeric powder - 1/4 tsp
6. Salt - As per taste

For Seasoning:

1. Oil - 1 to 2 tbsp
2.Mustard seeds - 1 tsp
3. Urad dal - 1 tsp
4. Curry leaves - 2 tbsp chopped
5. Asafoetida / hing - 2 pinches.

How to make thondekai palya:


1. Wash and chop tindora into a lengthwise or round shape as per your preference.

2. Keep a heavy-bottomed pan on a medium flame and pour oil.

3. Once the oil is hot, put mustard seeds and let them crackle.

4. Put urad dal, fry for a minute. Then add curry leaves and asafoetida.

5. Put the chopped tindora and saute for a few minutes.

6. Pour 150 ml of water or more if required.

7. Cover it with a lid and cook on a low medium flame. (Note: Tindora takes a longer time to cook. It took almost 20 minutes for me).

8. Once it is cooked well and soft to touch, add salt, turmeric powder, red chili, and coriander powder.

9. Mix it well and cook for 5 minutes. Then turn off the flame!

10. Garnish with some fresh chopped cilantro. (Note: You can add some fresh shredded coconut in the end to enhance the taste).
