Summer is here...and so is mango season!!! Here is a no-cook mango-based dessert that can be made within 15 mins. This recipe is a quick way to satisfy your sweet cravings.
Mango is the main ingredient in this recipe, so choose well-ripened, sweet, and pulpy mangoes to get a rich mango rasayana. It is a popular delicacy from the Udupi or Mangalore region of Karnataka.
Mavina hannu seekarne can be consumed like kheer/payasam or a side dish for poori, roti, phulkas, neer dose, akki shavige(idiyappam), and even plain dosa. It can be served either at room temperature or chilled.
Mango shikran is a simple, quick, and versatile delicacy. Mavina hannu is a Kannada word for mango, and rasayana means essence in Sanskrit. Mavina hannu seekarne is a traditional recipe from Karnataka cuisine.
Aamras is also eaten with poori in the Northern part of India during the mango season. However, this mango shikran tastes slightly different from the Gujarati aamras recipe as it is made with dairy milk.
This delicious mango delight is a must-try dessert for all mango lovers. It is also a no-cook and fruit-based vegan recipe. In fact, coconut milk adds a rich flavor to the mango rasayana. But, if you are not fond of coconut milk, it can be easily replaced with cow's milk, almond milk, cashew milk, or any vegan milk. Even jaggery can be substituted with sugar as well.
Mango seekarne is also similar to the bale hannu(banana) seehikarane recipe. Both are my favorites, and I make it regularly at home, particularly in the summer, as we all crave cold desserts. These kinds of recipes will definitely come in handy when you have overripened bananas and mangoes in stock. Alright, now let's get into the recipe.

Mavina hannu (mango) rasayana ingredients:
1. Ripened sweet mango - 1 or 2 cups of mango pulp
2. Thick coconut milk - 1 cup
3. Jaggery - 1/4 cup
4. Cardamom powder - 1/4 tsp
5. Dry ginger powder - 1/4 tsp optional
6. Salt - A pinch
Notes:
1. Try to choose a sweet, juicy, and pulpy mango.
2. I like to use jaggery as it gives a divine taste, but you can replace it with white or brown sugar. Adjust based on the sweetness of the mango.
3. Instead of coconut milk, you can use cow's milk or any nut milk like almond milk, cashew milk, oat milk, etc.
4. I have used homemade thick coconut milk using frozen coconut, but you can also use store-bought coconut milk.
5. You can make this rasayana with banana or muskmelon as well.
6. You can serve at room temperature or chilled.
7. This can be paired with poori, roti, holigae, phulkas, or eaten as a dessert.
How to make mango rasayana:
1. Wash mango, peel the skin using a peeler, and roughly chop it into small pieces.
2. Nicely squeeze and extract the mango juice from mangoes using your palm.
3. Then add jaggery, a pinch of salt, dry ginger powder, and cardamom powder.
4. Mix it well with a spatula.
5. Prepare homemade coconut milk and keep it ready; you may use store-bought coconut milk as well. But, the taste may differ.
6. Pour the coconut milk into the mango pulp and adjust the consistency. I prefer a semi-thick texture.
7. Give it a nice stir and refrigerate it for 15 mins or so. If not, serve the mango rasayana immediately.
8. You can serve the mango seekarne with poori, roti, chapathi, phulkas, or as a kheer.
