Carrot kheer is a type of Indian carrot pudding. It is a popular dessert served either warm or chilled on special occasions and weddings.

Gajar is a Hindi word for carrot. The term kheer is derived from the Sanskrit word "milk". Generally, the milk pudding is called "kheer" in North India and "Payasam" in South India.

Kheer is nothing but a type of sweet pudding made from boiled milk, sugar, cardamom, and ingredients like vermicelli, rice, fruits like mango, banana, pumpkin, veggies like carrot, beets, bottle gourd, and sago are added to the kheer.

Carrot payasam is a delicious dessert prepared from grated carrots, ghee, full-fat milk, sugar, cardamom, and topped up with saffron, cashew nuts, slivered almonds, golden raisins, and pistachios. It is a rich, flavorful, and creamy Indian carrot dessert that is enjoyed especially during summer.

Carrot kheer is quite easy to prepare. You can also make this kheer using different gadgets such as Kadai/pan, pressure cooker, instant pot, and microwave too.

There are different types of kheer recipes made using vegetables like a carrot (gajar), beetroot, pumpkin, bottle guard, and so on. Today we will see how to make a gajar ki kheer recipe, this version is prepared using a simple pan, and even a beginner can try this dish without much effort. Carrots are rich in Vitamin A and nuts are loaded with protein. It is a nutritious dessert.

Apart from carrot payasam, a lot of carrot sweet recipes can be made such as carrot halwa recipe, carrot pudding, carrot burfi recipe, etc.

Carrot payasam can be made with khoya, condensed milk/milkmaid too. It gives a rich flavor and smooth texture to the kheer. If you don't have it on hand, you can easily replace it with cashew nut or almond paste to get a flavorful and similar creamy texture.

I have also heard some people like to use sago in carrot sabudana kheer to get a similar thicker consistency. Sabudana denotes sago in English and javarishi in Tamil. Sago is made from the milk of tapioca root which is also called tapioca pearls. It is also used in Indian savory items like vada, khichdi, upma, etc.

If you have vermicelli in hand, you can slightly roast it and add it to the carrot vermicelli kheer. I remember trying this carrot semiya payasam sweet at one of my friend's wedding reception a few years back. It was quite different from the plain semiya payasam and tasted yummy.

Further, you can make carrot kheer using jaggery as well. These days many people want to avoid white sugar in their diet. So, instead of sugar, you may use brown sugar, coconut sugar, palm sugar, etc. 

If you prefer "Vegan carrot kheer", you can substitute the dairy milk with almond or cashew nut milk and saute the grated carrots with oil instead of ghee. Check out the ghee recipe as well.

Moreover, adding saffron is totally optional. I personally like to add Kesar to all my kheer recipes. It gives a beautiful yellowish hue that looks so delightful to the eyes. Further, a pinch of cardamom powder gives a wonderful addition to the kheer.

Carrot kheer ingredients:


  1. Grated carrots - 1 cup
  2. Milk - 1 liter/4 cups
  3. Sugar - 1/4 to 1/2 cup
  4. Ghee- 2 tbsp
  5. Soaked cashews - 2 tbsp
  6. Cashews/ Kaju - 2 tbsp
  7. Raisins - 2 tbsp
  8. Pistachios - 1 tbsp chopped
  9. Saffron/Kesar - 1 pinch
  10. Cardamom powder - 1/2 tsp

How to make carrot kheer:


1. To start with, soak 2 tbsp of cashews in hot water for 15 mins. Additionally, soak a pinch of saffron in a tbsp of water.

2. Wash, trim the ends of carrots, and peel off the skin. Grate it using a shredder and keep it ready.

3. Heat a few tbsp of ghee in a heavy-bottomed pan or Kadai. Fry cashews & raisins and keep them aside.

4. Add a cup of grated carrot to the same pan.

5. Saute until the raw carrot smell leaves off on a low medium flame. Takes around 5 to 8 mins.

6. Switch off the flame once it turns aromatic and shrinks in size. Let it cool down.

7. Take a blender jar, put the carrot, soaked cashews, and 1/4 cup of milk or water.

8. Grind it nicely until it turns into a smooth paste. Scrape the sides in between.
9. Now pour 1 liter of milk into the same pan.

10. Boil the milk on a medium flame. Scrape the side of a pan.

11. Pour the carrot cashew mixture into the boiling milk. Add saffron strands as well.

12. Let it boil and keep stirring on a medium flame. Scrape the sides as well.

13. Add sugar as per your sweet tooth. (Note: Quater cup for a mild sweetness).

14. Mix it well and let it cook until the sugar dissolves in the here. Add a pinch of cardamom powder at this stage.

15. Turn off the flame once it reaches the required consistency.

16. Garnish it with fried cashews and raisins.

17. Here you go... the carrot kheer/carrot payasam is ready to be served as warm or cold. 


Tips:

  • You can easily replace the white sugar with coconut sugar, jaggery, brown sugar, palm sugar, artificial sweetener, etc.
  • If you have a nut allergy, skip the nuts completely.
  • For vegans, you may use coconut milk, cashew milk, almond milk to make this recipe.
  • Add sugar at the last stage or after the carrot cashew mixture is cooked well.

9. Now pour 1 liter of milk into the same pan.

10. Boil the milk on a medium flame. Scrape the side of a pan.

11. Pour the carrot cashew mixture into the boiling milk. Add saffron strands as well.

12. Let it boil and keep stirring on a medium flame. Scrape the sides as well.

13. Add sugar as per your sweet tooth. (Note: Add quarter cup for a mild sweetness and half for medium level).

14. Mix it well and let it cook until the sugar dissolves in the here. Add a pinch of cardamom powder at this stage.

15. Turn off the flame once it reaches the required consistency.
