"Potato masala for poori" is also called "Poori masala recipe | Poori Urulai Kizhangu masala". 

In other languages, this recipe is known as Aloo bhaji recipe | Batata Bhaji recipe | Potato Bhaji recipe | Alugadde Sagu recipe | Potato onion masala | Poori Bhaji, etc.

Potato is also known as Aloo/Batata in Hindi, Gujarati, Bengali, and Punjabi. Aalugadde in Kannada, Urulai Kilangu in Tamil, Urulai Kizhangu in Malayalam, and Bangaala Dumpa/Urlagadda/Alu Gadda in Telugu. 

Poori masala is a potato-based side dish recipe. There are many different variations in making this dish. In this recipe, we will learn how to make South Indian style potato poori masala. It pairs well with poori/puri, dosa, chapati, roti, Rava idli, etc.

It is our family's favorite side dish. It tastes delicious with hot pipping poori and masala dosa. I would often make this recipe at home. It is quite easy and takes very little time to prepare.

This poori kizhangu masala is prepared with simple ingredients that are already available in your kitchen. The recipe calls for boiled potatoes, sauteed onion, and Indian spices as the main ingredients. It can be prepared in a jiffy.

If you want, you can add vegetables like green peas, finely chopped or shredded carrots along with boiled potatoes, it would look colorful and healthy as well. I have heard some people like to add either tomatoes or amchur (mango) powder for the tangy flavor. But, I have never tried it, so not sure how it would taste.

There are two variations in making this recipe. The spicy potato masala version has some Indian spices like red chili and coriander powder in it. It would look slightly reddish in color because of red chili. Whereas, the other version is a typical yellow potato masala, where we add green and red chilies for the spice and turmeric powder to bring the beautiful yellowish hue to the bhaji. I love the latter version very much which I would often make at home.

For roti and chapati, I would like to cook the potato masala in a gravy-like consistency. And, for masala dosa, I prefer to cook it slightly thick which is the perfect consistency for stuffing inside the dosa. Usually, the masala dosa comes with white coconut chutney and sambar along with aloo bhaji. Masala dosa is a delicious and wholesome meal. In fact, the same potato filling can be used to make potato bonda, potato vada, bread bonda, and bread sandwich. Potato poori masala is a versatile side dish.

In India, each and every state prepares this potato poori masala in different ways. The potato masala can be prepared with or without onion, ginger, garlic. Also, it is a vegan recipe.

This poori kilangu masala stays good for a day or two, so you can pack this side dish along with roti for road trips and picnic as well.

The piping hot poori with potato masala makes a scrumptious and wholesome combo for breakfast, brunch, and dinner too. Sometimes, it feels quite heavy on the stomach. So I prefer to eat them when I'm at home. 

It is a perfect recipe to prepare when you have sudden guests coming over and don't have vegetables in hand to cook an elaborate meal, in those situations these kinds of recipes come in handy.

Poori urulai kizhangu masala is a very popular South Indian side dish served in many restaurants. I'm a huge fan of "Hotel Saravana Bhavan style poori masala", whenever I go to HSB, this dish would be my first order. Their combo taste so flavorful and delicious. I like HSB food very much, their filter coffee, veg pulao, kothu parotta are my most favorites. They have so many branches in other parts of California but not in San Diego. I wish they open it soon in my place. In fact, I even requested them to do so when I went to HSB in Fremont, California. There, I had like 3 cups of filter coffee in one shot and couldn't sleep for two days because of the high caffeine spike. I felt very dizzy all the time, that was an unforgettable coffee vacation!!!😇

So coming back to the recipe, in the HSB version, they add besan flour/kadalai maavu/chickpea flour to thicken the potato masala. But I usually skip this step when I make it at home. I personally feel the potato masala tastes great without adding the flour. Recipe: Potato Poori Masala Recipe | Poori Urulai Kizhangu Masala.

Serves: 4
Cuisine: Indian.

Prep time - 5 min | Cook time - 20 min | Pressure cook - 15 min | Total time - 40 mins.
Kitchen tools: Pressure cooker or steamer, pan with lid, and spatula.

Ingredients:
  1. Boiled potatoes - 2 large/3 medium/4 small.
  2. Red onion - 1 medium.
  3. Water - 1 cup
  4. Green chili - 2 
  5. Cilantro - few
  6. Turmeric - 1/2 tsp
  7. Salt - 1 tsp or as per taste.
To Temper:
  1. Oil - 1 tbsp
  2. Mustard seeds - 1 tsp
  3. Cumin seeds - 1 tsp
  4. Channa dal - 1 tsp
  5. Urad dal - 1 tsp
  6. Red chili - 2
  7. Curry leaves - few
  8. Cashew nuts - 10 
  9. Raisins - few
  10. Asafoetida - 2 pinch
  11. Ginger - 1 tbsp chopped

How to make poori masala recipe?

  1. Boil the potatoes in a steamer or pressure cooker. Once it cools down, peel the skin and chop them into cubes.   
  2. Now take a large pan and pour a tbsp of oil. Heat it on a medium flame. 
  3. Add mustard seeds, once it cracks, add cumin seeds, urad dal, channa dal, and cashews. Fry them until it turns brown. 
  4. Now add curry leaves, red chili, and asafoetida. 
  5. Add sliced onion. 
  6. Sprinkle some salt.
  7. Saute onion until it turns translucent. 
  8. Add half tsp turmeric. Mix it well.
  9. Now add in the boiled potatoes. 
  10. Mix it well and let it cook on a medium flame.
  11. Pour enough water as per your required consistency and adjust salt. 
  12. Cover it with lid and let it cook on a medium flame for 10 minutes. 
  13. Potatoes cooked well. Now roughly mash some potatoes using the back of a spatula or spoon to thicken the masala. Add some water if required and boil it nicely for 5 mins. Switch off the flame. The total cooking time takes around 20 mins. Finally, garnish it with a generous amount of cilantro.
  14. Poori potato masala is ready to be served. Enjoy!!!

Tips and tricks to get a perfect potato masala:

  • In hotels, besan/chickpea flour is added to thicken the masala. In case if you don't have, there is another way:)
  • Instead of besan flour, take some boiled potatoes from the pan and mash it well and then add back to the same potato masala. This is my way of thickening the gravy. Trust me this works well if you don't like the flour smell.
  • Adding cashew nut and raisins are completely optional. I love the nutty flavor and raisin gives a mild sweetness to the potato masala.
  • Add a tsp of red chili powder for a hot and spicy flavor. 
  • If you are adding tomatoes, add them after sauteeing the onions. 
  • Finely chopped/shredded carrots and green peas can be added along with boiled potatoes. 
  • You can alter this potato masala as no onion no garlic recipe for festive occasions. Just boil the potatoes, temper them with Indian spices and cook them for some time and finally, garnish it with some cilantro/coriander leaves.

6. Sprinkle some salt to speed up the process of sauteeing.

7. Saute onion until it turns translucent.

8. Add half tsp turmeric. Mix it well.

9. Now add in the boiled potatoes.

10. Mix it well and let it cook on a medium flame.

11. Pour enough water as per your required consistency and adjust salt as per your taste.

12. Let it cook for some time.

13. Cover it with lid and let it cook on a medium flame for 10 minutes.

14. Potatoes cooked well. Now roughly mash some potatoes using the back of a spatula or spoon to thicken the masala.
