Eggless banana bread is a delicious sweet bread made from overripe bananas, whole wheat flour, walnuts, oil, etc. I would often prepare this banana walnut bread at home, especially when I have overripe bananas in hand.

In addition, walnuts are added for an extra crunch which makes the banana bread more crunchy, and flavorful. This banana walnut bread can be served as an evening snack with coffee or tea or eaten as a dessert. In fact, it can be enjoyed at any time of the day.

It is very simple to prepare and takes just 1 hour to bake. Of course, the baking time varies as per the conventional oven you use.

This banana walnut bread is a foolproof recipe. I have tried making this bread several times at home before posting it on my blog. So simply follow the exact measurements given below and I'm sure your banana bread would turn out super soft, spongy, and fluffy. In this recipe, I have not added egg, milk, butter, or yogurt, so it is absolutely eggless and also a vegan banana bread recipe.

In fact, banana bread can be made without eggs too. It can easily be replaced with mashed banana which helps to bind the ingredients and the structure of the bread. Besides, adding oil helps the bread to stay moist and tender for a longer time.

So, how many of you tasted Starbucks banana nut bread and got addicted to it? In fact, Starbucks was the motivation behind my baking venture. It is one of my favorite bread and I used to have them twice a week for my breakfast at my university. But, after finishing college, I started missing it so much and thought I should learn the recipe to satisfy my cravings. I have baked so many times in my kitchen!

Traditionally, the banana walnut bread is prepared using cake flour/ plain white flour/all-purpose flour which is also known as menda/maida in India. Any bakery foods such as cakes, cookies, bread made with plain flour taste real and much better when compared to the other flours like oat flour, millet flour, wheat flour, etc.

But in this recipe, I simply tried baking the banana bread with whole wheat flour. To my surprise, the whole wheat banana walnut bread turned out so soft and fluffy. I enjoyed it very much and couldn't find any difference.

In fact, both all-purpose and wheat flour works perfectly with the given measurements. But health-wise, whole wheat flour is much better than maida/all-purpose flour. Please feel free to experiment with any of these two flours. 

This banana bread is very simple to prepare, even a beginner can try this recipe. It requires fewer ingredients that are already available at home. I love the natural flavor of banana and walnuts, hence I didn't add vanilla essence. You may add a tsp of it if you like the flavor.

Furthermore, overripe bananas are high in sugar so adjust the sweetness as per your sweet tooth. Here, I have mentioned around 1 cup of sugar, it's perfect for me.

Additionally, I have added a dash of cinnamon powder which gives a nice aroma to the banana bread. Do read the tips given below to get a perfect moist banana bread. Alright, now let's get into the recipe!

Recipe - Eggless Banana walnut bread recipe | eggless whole wheat banana bread recipe

Kitchen tools - Large bowl, whisker, sieve, knife, spatula, loaf pan.
Serves - 1 medium loaf | 8 to 10 slices.


Dry Ingredients: (US cup measurements)

1. Whole wheat flour - 1.5 cups /180 grams.
2. White Sugar - 1 cup /120 grams.
3. Baking Powder - 1 tsp.
4. Baking Soda - Half tsp.
5. Cinnamon Powder - 1/4 tsp
6. Salt - a pinch.
7. Walnuts - 1/4 cup/30 grams/14 pieces.

Wet Ingredients: 

1. Ripe Bananas - 2 large/3 medium/4 small.
2. Oil - Half cup/120ml.
3. Vanilla essence - 1 tsp optional.

How to make eggless banana bread:


1. Preheat the oven to 170 degrees Celsius / 350 degrees Fahrenheit. This takes around 10 to 15 minutes to preheat which depends on the oven.

2. Now, take a wide mixing bowl. Mash the bananas roughly using a masher or a fork.

3. Add sugar and mix it well until the sugar dissolves.

4. Pour oil.

5. Take a sieve and place it on the mixing bowl.

6. Sieve the flour then add salt, baking powder, baking soda, cinnamon powder.

7. Mix the batter using the cut and fold method.

8. Transfer it to the loaf pan. (Note: I used Calphalon 8.5 * 4.5-inch medium loaf pan).

9. Add some chopped walnuts on top and slightly press it into the batter. Tap the loaf pan twice to release the air bubbles from the batter.

10. Place the loaf pan in the middle of the preheated oven and bake the bread for 60 minutes. (Note: The baking time varies and adjusts as per your oven).

11. Test the bread by inserting a knife/toothpick/skewer in the middle and it should come out clean.

12. Take out the loaf pan carefully and let it cool for 15 minutes.

13. Take a knife and loosen the side of the bread.

14. Flip the bread over a mesh and let it cool for a minimum of 30 minutes.

15. Slice the bread into a 1-inch piece. The eggless vegan banana walnut bread is ready to be served.

Tips to get a perfect banana bread recipe:


1. Use only fresh over-riped and well-mashed bananas that work best to get a soft tender texture and natural sweetness. I personally don't recommend frozen bananas for this recipe.

2. Be very careful with the oven temperature setting. Don't just go by time as each and every conventional/OTG oven work differently. Usually, the bread bakes from the outside first. So make sure you test it using a knife/skewer/toothpick. You must bake the bread until you get a clean knife. Just increase the temperature by 5 mins at a time.

3. Sieve the flour once or twice to get a lump-free cake batter. Do not over mix the batter. Use the cut and fold method while combining the wet and dry ingredients.

4. Keep the loaf pan in the middle of the oven and do not open the oven door often to check.

5. The bread tastes best the next day which is left at room temperature. The flavor of banana and walnut incorporates well into the bread overnight and tastes so delicious. (Figured out by experience).

6. Add a tsp of vanilla essence if you wish.

7. Banana works as fat in this recipe, so it's okay in case you add an extra banana. Also, you can replace the oil with melted butter.

8. You can pretty much add any variety of nuts and seeds. If you have a nut allergy, feel free to skip it.

9. If you like choco chips, go ahead and make a banana choco-chip bread.

10. Slice the bread only after it cools down completely. Use a sharp bread knife to get a smooth slice.

11. Banana bread can be stored outside for 2 days in an air-tight container and it stays good for a week in the refrigerator. You can even store the individually sliced bread in the freezer for up to a few weeks. Warm it up in a microwave oven and enjoy!

7. Combine all the wet ingredients nicely.

8. Place the sieve and add all the dry ingredients (flour, salt, baking powder, baking soda, cinnamon powder).

9. Sieve it nicely and make sure there are no lumps formed.

10. Mix the batter using the cut and fold method. Do not over mix the cake batter.

11. Add chopped walnuts or any nuts of your choice.

12. Grease the loaf pan with oil or butter. (Note: I used Calphalon 8.5 * 4.5-inch medium loaf pan).

13. Pour the batter into the loaf pan.

14. Add some chopped walnuts on top and slightly press it into the batter. Tap the loaf pan twice to release the air bubbles from the batter.

15. Place the loaf pan in the middle of the preheated oven and bake the bread for 55 to 60 minutes. 
(Note: The baking time varies and adjusts the timing as per your oven).

16. Test the bread by inserting a knife/toothpick/skewer in the middle and it should come out clean.

17. Take out the loaf pan carefully from the oven and let it cool for 15 minutes.
