Do you crave a hot dessert in cold weather? Well, I do! San Diego has been really cold, cloudy, and raining. So I wanted to make something warm and comforting dessert to pamper myself. Voila, here I am with a bowl of gorgeous pink delicacy, which is not only delicious but rich, decadent, and enticing beetroot halwa.
Beetroot halwa is a vegetable-based sweet pudding made with freshly grated beetroot, milk, khoya, ghee, sugar, cardamom, and dry fruits. It is usually served warm and specially prepared during the winter season.
Beetroot halwa is a slow-cooked dessert, though it is easy to prepare but takes a lot of time and patience because the halwa needs to be stirred continuously on a low flame. So the entire cooking process takes about 1 hour, and to save time, I usually shred beetroot the previous day and store them in the fridge. This halwa can be made in many ways, like an open pan, instant pot, or pressure cooker. You can either shred the beetroot in a handheld or an electric grater.
In fact, the cooking procedure is similar to my carrot or gajar ka halwa. The grated beets are sauteed in ghee until the raw flavor leaves off and then slow-cooked in full-fat milk on a low flame. Then the sugar is added for the sweetness and finally flavored with cardamom powder, ghee-fried nuts, and raisins.

1. Beetroot mainly consists of water (87%), carbs (8%), and fiber (2–3%).
2. It contains a rich source of antioxidants and phytochemicals, which help maintain cardiovascular health.
3. Beetroots are rich in iron and Vitamin C.
4. 100 gms of raw beets contain 45 calories.
5. Beetroots have a medium glycemic index score of 61 and a glycemic load of five. The glycemic index explains how fast the blood sugar will rise after consuming a meal.
6. Beets contain folate, manganese, potassium, iron, vitamin C, etc.
7. Beets may help lower blood pressure.
Health benefits of ghee:
1. Ghee is a dairy-based product but lactose and casein-free. It is pure fat and doesn't contain any carbohydrates.
2. It contains healthy saturated fats.
3. Ghee is rich in butyric acid
4. It has a high smoke point.
5. It has high levels of Conjugated Linoleic Acid (CLA) and antioxidants
6. It contains fat-soluble Vitamins such as Vitamin A, D, E, K
7. Vitamin D helps our body to absorb calcium.
8. It keeps you satiated and helps with weight loss
9. Ghee is considered a brain tonic in Ayurveda.
10. It helps with digestion.
11. Ghee is good for skin and hair.
12. It strengthens bones and boosts immunity.

Beetroot halwa ingredients:
Grated beetroot - 600gms
Ghee - 50 ml
White sugar - 100 gms
Milk - 150 ml
Cardamom powder - 1/4 tsp
Cashews - 20 nos
Raisins - 10 nos
Unsweetened khoa - 100 gms
Salt - A pinch
How to make beetroot halwa:
1. Wash and peel the beetroot skin.
2. Grate the beets on a handheld grater or food processor. I prefer medium-thick beet pieces. So chose the blade accordingly.
3. Keep the grated beetroot aside.
4. Heat ghee and fry cashews in a heavy-bottomed large pan until it turns aromatic and golden brown. Transfer it to a bowl.
5. In the same pan, pour some more ghee.
6. Add the grated beetroot to ghee.
7. Saute on low heat for 10 minutes or until the beetroot becomes soft and the raw smell leaves off. Let the water content in the beetroot evaporate and cook 50% before adding milk.
9. Then pour milk and blend well.
10. Cook on low heat until all the milk is absorbed. Keep stirring, and don't forget to scrape the sides of a pan.
11. The beet and milk mixture would take 15 minutes to cook nicely.
12. Add the sugar as per sweetness and give it a nice mix. Also, add a pinch of salt to balance the flavor.
13. Let the sugar melt and release water. Keep simmering on low heat for 10 mins.
14. Saute till the sugar is absorbed completely.
15. Now add the crushed/grated khova.
16. Keep stirring the mixture for a few mins.
17. Let the khova lumps be combined well on low flame. Mix it nicely, and do not cook for long after adding khova.
18. Now, pour the ghee along with fried nuts and raisins.
19. Sprinkle cardamom powder, saute for a minute and turn off the flame.
20. Serve the beetroot halwa immediately or allow it to cool. It can be served hot or cold. Leftovers can be stored in the refrigerator for a week.
