Rava Kesari is a classic Indian semolina pudding typically made from semolina (rava/sooji), sugar, water, and ghee. Pineapple rava Kesari is nothing but an addition of pineapple chunks to a plain rava Kesari which makes the sweet more distinct and flavorsome. It is a very popular dessert in South India.

Kesari can be served warm or cold, but this tastes exceptionally great when served warm along with ghee fried cashews on top. A hot scoopable Kesari is my all-time favorite dessert. This recipe is easy as well as quick to make. Even a novice can try this dish without any hassle. It is a must-try recipe if you are fond of pineapples.

I would always prefer a pineapple Kesari bath over the plain one. The specialty of this recipe is, in every bite, you would get the small bits of the sweet and sour flavor of pineapple that is absolutely irresistible. It is such a lip-smacking delicacy prepared especially during festivals, weddings, and on special occasions in India. 

Particularly in Karnataka, this pineapple Kesari bath is served for breakfast. Bath is traditionally served along with Uppitu/Khara bath (savory upma) on one plate and the combo meal is popularly called "chow chow bath" by Kannadigas. 

Additionally, this can be had with poori too. My grandma used to make poori and Kesari bath for breakfast. This poori-Kesari combo tastes so delicious and it is quite a common dish in Karnataka.

The Kesari is commonly called as "rava kesari" in Tamil and Telugu, "kesari bath/bhath" in Kannada, "sheera" in Marathi and Hindi, and "suji halwa/sooji ka halwa" in North India and Bangladesh. Also, Pineapple kesari is colloquially called pineapple pudding in Tamil Nadu.

Moreover, there is a slight variation between the North Indian sheera and South Indian kesari. Both have similar ingredients but the outcome and texture are quite different.

In fact, I have tried both South and North Indian version. The sheera is so pure and a straightforward recipe, usually made with rava, little ghee, sugar, and no saffron/food color is added to it. Whereas the South Indian kesari feels so rich and flavorful, a bit gooey, and looks vibrant too. I have always favored kesari and regularly prepare it in my kitchen.

The word "Kesari" refers to a spice ingredient "Saffron", it is usually added to bring a natural sunset yellow hue to the food. Since saffron is not pocket-friendly, it may be replaced with edible food colors too.

As far as I know, in most of the South Indian hotels and weddings, the kesari looks deep orange/yellowish in color. However, if you don't favor synthetic colors, simply add a pinch of turmeric powder to get a similar saffron tint.

In this recipe, I have used fresh sweet pineapples. If you don't have access to the fresh ones you may use frozen or canned pineapples too. Nevertheless, the fresh ones taste so much better. Also, I didn't add pineapple essence, I feel the fresh juicy pineapples are enough to provide an authentic flavor to the pineapple Kesari.

In India, Semolina/Sooji/Rava is frequently used in both sweet and savory dishes that include rava upma, rava dosa, rava idli, rava Pongal, rava kichadi, rava porridge, and sweet ones are rava ladoo, rava burfi, rava halwa, rava kheer, etc.

Apart from rava kesari, We can also make several different variations of kesari that includes (Poha) aval kesari, (vermicelli) semiya kesari, (milk) paal kesari, etc.

Ingredients:

Upma Rava/Sooji/Semolina - 1 cup
Pineapple - 1/2 cup chopped
Sugar - 1 cup plus 3 tbsp
Ghee - 6 tbsp
Oil - 6 tbsp
Water - 2 cups
Cashews - 10
Raisins - 10
Salt - A pinch

Tips and tricks to get a perfect pineapple kesari:


1. Fresh pineapples works best for this recipe.
2. Use only flavorless oil like canola oil, sunflower oil, etc. Never use peanut oil and coconut oil.
3. Saffron gives a natural hue and nice aroma.
4. Semolina/rava/sooji must be roasted on a low flame.
5. Hot boiling water is the key to kesari.
6. Rava absorbs a lot of ghee, so increase the ghee quantity if required.
7. A pinch of salt is the secret ingredient to the sweets, it helps to balance the sweetness of the dish. So don't skip it.
8. Upma rava/fine semolina works for this kesari.
9. The ratio of rava, sugar, and water is 1:1:2.
10. Both ghee and oil are important to get a scoopable kesari.
11. The entire cooking process should be done on low flame.
12. A drop of pineapple essence may be added.

Preparation before starting the procedure:


1. Soak a pinch of saffron strands in a tbsp of water for 10 mins.

2. Chop pineapples into small chunks and soak the pieces in 3 tbsp of sugar for 10 mins.

3. Heat 2 cups of boiling water in a saucepan over a medium flame.

How to make pineapple kesari:


1. Heat 3 tbsp of ghee in a pan/Kadai and fry cashews, raisins until golden brown on a low flame.

2. Add 1 cup of semolina/rava/sooji.

3. Roast the sooji over a low flame for 5 mins or until it turns aromatic. (Note: Semolina roasting is vital as it helps to avoid forming lumps while adding hot water at the later step).

4. Add the saffron-infused water along with strands.

5. Stir it well and let the flame be on a low level.

6. Now add the sugar-soaked pineapple chunks.

7. Combine it over a low flame.

8. Add 1 cup of sugar. (Note: The ratio of rava to sugar is 1:1).

9. Stir it for 2 to 3 mins and the rava sugar mixture becomes sticky and gooey.

10. Now pour 2 cups of hot boiling water. (Note: Add very hot boiling water only. Cold or room water temperature doesn't work).

11. Stir it for a minute or until no lumps are formed. (Note: If you roast the rava properly, chances of lump formation are quite less).

12. Pour the remaining ghee and oil. 

13. Sprinkle a pinch of cardamom powder. 

14. Close it with a lid and let it cook for 5 mins over a low flame. Let the mixture absorbs all the water, ghee, and oil. (Note: Don't open the lid in-between). 

15. Now open the lid and there will be some oil/ghee floating on top of the kesari. (Note: Oil will be floating only if you pour the required quantity).

16. Give it a mix and switch off the flame. (Note: Pinch a small portion and make a ball with your finger, and it should not be sticky).

17. Scoop and serve the warm pineapple rava kesari in a plate/bowl. 

How to make pineapple rava Kesari with stepwise images:


1. Heat 3 tbsp of ghee in a pan/Kadai and fry cashews, raisins until golden brown on a low flame.

2. Add 1 cup of semolina/rava.

3. Roast the rava nicely over a low flame for 5 mins or until the raw smell of rava leaves off. (Note: Semolina roasting is vital as it helps to avoid forming lumps while adding hot water).

4. Add the saffron-infused water along with strands.

11. Stir it for a minute or until no lumps are formed. (Note: If you roast the rava properly, chances of lump formation are quite less).

12. Pour the remaining ghee and oil.

13. Sprinkle a pinch of cardamom powder.

14. Close it with a lid and let it cook for 5 mins over a low flame. Let the mixture absorbs all the water, ghee, and oil. (Note: Don't open the lid in-between).

15. Now open the lid and there will be some oil/ghee floating on top of the kesari. (Note: Oil will be floating only if you pour the required quantity).

16. Give it a mix. Pinch a small portion with your fingers and make a ball, it should be soft, smooth, and not sticky consistency. Next, switch off the flame.

17. Scoop and serve the warm pineapple rava kesari in a plate/bowl.
