Shrikhand recipe is a chilled sweetened yogurt, a popular Indian dessert recipe that is especially common in Gujarat, Maharashtra, and Karnataka. Shrikhand is typically made with strained yogurt/hung curd/chakka, nuts, saffron, sugar, and cardamom.

The Mango shrikand recipe is nothing but an addition of mango pulp to the plain shrikhand. It is a type of Indian-style mango-flavored yogurt. As mango is in the season, this is an ideal recipe to prepare and relish with your family. You can use fresh ripe mangoes or canned mango pulp as well. Amrakhand is a heavenly and irresistibly delightful dessert.

Apart from mango, shrikhand can be flavored with any type of fruit pulp/puree.
Shrikhand tastes delicious and has a smooth creamy texture. It is quite simple and easy to make within 10 minutes. This chilled instant mango greek yogurt is a perfect recipe to quench your thirst on hot summer days.

Shrikhand
is usually served in Gujarati and Maharashtrian weddings as part of the lunch thali meal. Traditionally, the shrikhand recipe is prepared using hung curd which is also known as chakka in the Marathi language. But today I made this amrakhand with greek yogurt which is easy and quick as well.

Shrikhand can be served as a dessert or with puri, and roti as well. In Karnataka, the shrikhand recipe is called "shikarni or shikharini". My grandma makes amrakhand every Sunday during mango season. She particularly uses the banganapalli variety for aam shrikhand. It tastes amazingly delicious with hot pipping poori.

The Indian style homemade hung curd is a little time-consuming work, so I prefer to use a store-bought greek yogurt for an instant mango shrikhand and sometimes I use labneh/labnah/labne (Middle eastern strained yogurt).

Greek yogurt is strained yogurt, which has a thick and creamy texture. Whereas labneh is extra strained yogurt, has a tangy flavor which is also perfect for mango shrikhand.

Furthermore, this instant mango shrikhand is the best alternative for ice cream as the former contains a good amount of protein, calcium, and healthy fats. So, it can be relished when you are on diet, it is quite healthy and my favorite go-to dessert recipe.

The plain yogurt absorbs all the flavors like saffron/kesar, cardamom/elaichi, and fruit puree. Further, the cardamom gives a nice aroma and saffron produces a beautiful yellowish hue to the mango shrikhand. So I never miss the kesar in amrakhand.

Kesar and elaichi is my all-time favorite combo in desi sweets, lassi, and golden turmeric milk/latte. I love to sprinkle my mango shrikhand with pistachios for a crunch, soaked saffron strands for the yellow tint, and mango slices for the freshness.

Each spoonful of shrikhand tastes absolutely divine! It is a must-try dessert if you favor mango and yogurt combo. If you want a vegan version, use any plant-based milk yogurt such as almond milk yogurt, coconut milk yogurt, etc. You can also replace sugar with stevia.

Let's see what kind of ingredients can be added to the plain shrikhand recipe, you can add chopped fruit pieces or fruit puree/pulp of strawberry, blueberry, raspberry, mango, chikoo, custard apple, banana, dates, raisins, rose syrup, and so on.

The list of fruit choices and combinations is endless. You may even add coffee powder to it and make coffee/tiramisu shrikhand but I personally never combine these two so I have never tried it.

Though I have used store-bought greek yogurt for this recipe, still, I would like to briefly explain how to make hung curd at home. Hope this will help in case you want to try aam shrikhand with hung curd/chakka.

How to make hung curd:

1. Firstly, take a large bowl and on top keep a medium-size mesh strainer. Then, line a cheesecloth/muslin cloth/clean kitchen towel over a strainer. (There should be enough gap between the bowl and strainer to collect the whey water from curd/yogurt).

2. Secondly, pour fresh curd into the cloth and tightly tie the cloth using the four edges. (Do not use sour curd for this recipe).

3. Thirdly, gently squeeze the cheesecloth and the excess water in the curd (whey) will start to drip in the bowl through a strainer. Next, place a heavy object like mortar and pestle or water bottle over the tied cheesecloth. Let all the water drain completely which takes about 6 to 8 hours or overnight. You may keep it outside or in the refrigerator.

4. Finally, remove the bowl from the refrigerator and the whey has been completely drained off in the bowl. Untie the cheesecloth and take out the remaining curd (which looks rock solid and dense in texture) and transfer it to a container. 
(Note: Do not throw away the whey water. You can use it in roti).

5. Chakka/Hung curd is ready to use for shrikhand. You can store the leftover in the fridge for a week or so.

Alright, now let's get into the mango shrikhand recipe.

Shrikhand Ingredients:

Ripe Mango chunks - 1/2 cup
Hung curd/Full-fat greek yogurt - 1 cup/200 gms
Powdered sugar - 1 to 2 tbsp
Cardamom powder - A pinch
Soaked saffron - A pinch

Toppings:

Any nuts - 2 tbsp crushed
Saffron - A pinch
Fresh mango pieces - 1/4 cup

Tips:

1. Always use fresh yogurt/curd for the shrikhand recipe. Never use sour curd.

2. You can use fresh ripe mango or canned mango pulp as well. Both work perfectly.

3. Powdered sugar can be replaced with stevia/coconut sugar/palm sugar. But the taste might differ.

4. Kesar/Saffron is an optional ingredient.

5. Full-fat Greek yogurt works best for this recipe. (I have tried it with Fage, Siggi's, Maple hill, chobani brands).

6. Hung curd/Greek yogurt/Labne can be used for this shrikhand recipe.


Procedure before starting the recipe:


1. Take two tbsp of sugar in a mixie/blender jar.

2. Powder the sugar then transfer it to a bowl and keep it aside.

3. Wash, and peel the mango skin with a peeler. Roughly chop mangoes and add them to the same jar. (You may use canned mango pulp as well, in that case, skip this step and add 3/4th cup of pulp directly to the beaten yogurt).

4. Blend onto a smooth paste without adding water.

5. Soak saffron in a tbsp of hot water and keep it aside. (Saffron is optional. So, feel free to skip if you don't have it. I add them for the yellowish hue).

How to make mango shrikhand recipe:


1. Take hung curd or Greek yogurt. (I used Fage 5% - 200gms full-fat greek yogurt. You may use any brand).

2. Scoop the yogurt and transfer it to a bowl.

3. Whisk until the yogurt turns smooth and creamy. Make sure there are no lumps and you may use a fork or whisker to beat the yogurt.

4. Pour the mango pulp/puree into the well-beaten greek yogurt.

5. Gently combine the mango-yogurt mixture.

6. Now, add the required amount of powdered sugar or stevia.

7. Combine it nicely and add soaked saffron.

8. Mango shrikhand is ready to be served in a bowl and add toppings if you like.

9. Scoop and enjoy the mango shrikhand instantly or keep them in the refrigerator for 30 mins or so for a chilled mango shrikhand.
