Aloo palak sabzi recipe is a stir-fried North Indian based spinach potato curry recipe. It is a popular dish served in roadside restaurants which are called Dhaba in the Northern part of India.

Aloo palak curry is a vegan dish. It is a healthy and tasty side dish for rasam, sambar, and curd rice as well. It is quite easy to make curry, prepared from lightly sauteed spinach and boiled potatoes along with some spices like red chili and coriander powder.

It is a mildly spiced curry and similar to the aloo palak recipe dry version which was posted a few days back in my blog. I love leafy-greens that include lettuce, spinach, and we try to incorporate them at least thrice a week. My spouse can eat raw spinach in salads, whereas I prefer the sauteed version. In fact, I make this aloo palak sabzi once a week at home.

It is a delicious side dish that I love to have with rice and Karnataka style bele saaru recipe /dal rasam. Also, I made this aloo palak recipe without onion garlic. So it can be eaten on festival days too.

If you are particular about onion, go ahead and add it after seasoning the cumin seeds. You can even add amchoor/dried mango powder or some chopped tomatoes for the tangy flavor.

Aloo palak ki sabji ingredients:


1. Boiled potatoes - 2 big/3 medium/4 small
2. Spinach - 1 bunch / 300 gms
3. Oil - 1 tbsp
4. Cumin seeds - 1 tsp
5. Red chili powder - 1/2 tsp
6. Coriander powder - 1/2 tsp
7. Turmeric powder - 1/4 tsp
8. Salt - 1 tsp/ As per taste

How to make aloo palak sabji:


1. Wash and boil the potatoes in a steamer/pressure cooker. 

2. In the meantime, wash and roughly chop the spinach and keep it aside.

3. Now take a heavy-bottomed pan and heat 1 tbsp of oil on a medium flame.

4. Once the oil becomes hot, add cumin seeds and fry for a minute.

5. Add turmeric powder, coriander powder, and red chili powder to the oil.

6. Give it a mix and toss the cubed potatoes and saute gently.

7. Now add the freshly chopped spinach to it.

8. Give it a mix and let the spinach cook and reduces in size.

9. Sprinkle some salt and a few tsp of water if required. (Note: Do not add more than 1 tablespoon of water and pour water only if you like semi-think consistency).

10. Give it a mix and check salt. Turn off the flame once it is done.

11. Aloo palak sabzi recipe is ready to be served with roti/chapati/rice.

How to make aloo palak sabzi with step by step photos:

3. Once the pressure is released, open the cooker lid and take out the boiled potatoes. Peel off the skin and dice the potatoes into cube size.

4. Now take a heavy-bottomed pan and heat 1 tbsp of oil on a medium flame.

7. Give it a mix and toss the cubed potatoes and saute gently.

8. Now add the freshly chopped spinach to it.

9. Give it a mix and let the spinach cook and shrinks in size. Add salt.

10. Pour a few tbsp of water if required. (Note: Do not add more than 2 tablespoons of water, it is optional, and add water only if you like semi-think consistency).

11. Give it a mix and check salt. Turn off the flame once it is done.
