Badam halwa is a nut-based halwa, a popular South Indian dessert recipe. It is a rich, and classic dessert that tastes so delicious and looks vibrant. This sweet is nothing but a Saffron flavored almond pudding prepared in Indian style. This almond sweet recipe is truly a feast for the eyes.

The badam halwa ingredients are simple and readily available too. The combination of freshly pureed almonds, milk, sugar, and ghee, is constantly stirred on a medium flame until getting a perfect consistency. 

In addition to that, I have added crushed cardamon and kesar/saffron for the flavoring and yellowish hue. Also, adding lots of ghee helps in getting a smooth and melt-in-mouth texture.

I can't imagine my badam halwa without saffron/kesar. I believe it gives a pleasant aroma and yellowish hue to the halwa. However, it can be prepared without that too.

In case if you don't have kesar in hand and are particular about the color, there is a way, the kesar can be replaced with a pinch of turmeric powder, or synthetic yellow food color.

In India, badam halwa is usually prepared for special occasions, parties, and a return gift for friends and relatives. This delicacy is specially made during festivals like Diwali, Holi, Raksha Bandhan and served at many weddings.

Badam halwa holds a special place in my heart. I prefer a coarse and grainy textured badam halva over a smooth one. Moreover, I'm so fond of Sri Krishna sweets badam halwa; I have tested them several times over there and always loved them.

Badam ka halwa can be eaten warm, cold, or at room temperature. Hot scoopable badam halwa is my all-time favorite dessert. It is a sumptuous and luscious dessert to satisfy the sweet cravings. So, I often make this recipe in my kitchen, and this procedure is so easy and never fails me, I always get it right with perfect consistency and that distinct grainy texture.

Badam halwa is very simple and quick to make. So you can prepare this dessert at any time. This almond-based dessert is so popular in India and a well-known delicacy in Pakistan and Bangladesh. So, the word "Badam" denotes Almonds in English, and "Halwa" is an Arabic word for sweet. Halwa is also spelled as halva, halvah, haluva, etc.

For this recipe, I had soaked almonds overnight and ground them with milk to a coarse paste. Alternatively, You can also use water or any nut milk for grinding the almonds.

However, if you want to make almond halwa instantly, cook the whole almonds in hot water for 30 minutes. Let it cool down a bit and peel the almond skin using a towel or with your fingers. Then grind the peeled almonds along with cow milk/nut milk/room temperature water in a blender. Grind it coarsely to get the grainy textured badam halwa.

, I want to mention the difference between almond flour and almond meal. The almond flour is blanched and ground into a fine/coarse powder, mainly without the skin. The almond halwa can be made with almond flour too.

For an almond meal, the almonds are ground into a coarse powder along with the skin. Both are widely used in gluten-free baking recipes and paleo diet recipes. Almond flour recipes include almond flour halwa, chocolate burfi with almond flour, almond butter burfi, etc. Now, let's get into the recipe!

Badam halwa ingredients:


1. Almonds - 1 cup
2. Milk - 1/2 cup
3. Ghee - 1 cup
4. Saffron/Kesar - 2 pinches
5. Sugar - 1 cup
6. Cardamom - 1 crushed
7. Salt - A pinch

Preparation before making badam halwa:


1. Wash and soak 1 cup of raw almonds for 10 hours or overnight in a bowl of hot water. (Note: Almond skin can be peeled off easily when you soak them in hot water. Alternatively, you can put raw almonds in hot boiling water for 30 mins to peel off the skin).

2. Grind the soaked & peeled almonds to a coarse paste along with milk. (Note: You can use room temperature water to grind almonds, but milk makes the sweet rich in taste, so I highly recommend using full-fat milk).

3. Soak the saffron strands in 2 tbsp of hot water/milk for 5 mins. (Water releases a better color).

How to make badam halwa: (stepwise images, tips are given below).


1. Take a heavy-bottomed pan or Kadai, add a spoonful of ghee and almond paste. Then turn on the flame and keep stirring the mixture for 5 mins on a medium flame. (Note: Do not put the almond paste on a heated pan, turn on the flame only after adding the mixture).

2. Add saffron-infused milk and stir until the mixture turns yellowish.

3. Add sugar and keep stirring it well until the sugar dissolves completely. Make sure there are no lumps formed.

4. Let it cook. Add ghee in intervals and keep stirring the liquid mixture, which slowly forms bubbles and starts to thicken. Takes around 3 to 5 mins.

5. Stir well until the mixture slowly starts to separate and leave the sides of the pan. It should take around 8 to 10 mins on a medium flame.

6. The mixture turns gooey and sticky like halwa consistency. Add powdered cardamom in this stage and Keep stirring for a few more minutes on a medium-low flame. Also, 

7. Turn off the flame once the mixture starts oozing out the ghee and gets solidified. Be careful at this stage. Keep the flame low. Add a pinch of salt. 
(Salt is added to sweets just to balance and enhance the overall flavor. Please do not add more than a pinch).

8. Pinch a small portion and see you can make a ball.

9. Stir it for some more time until the ghee slightly oozes out.

10. Switch off the flame when it reaches the scoopable consistency; that is, the texture should be soft, coarse, and grainy. Immediately transfer the mixture into a glass bowl or a plate. (Careful; the mixture will be hot. Do not leave the mixture in the same hot pan as the texture might turn dry and becomes like badam burfi consistency).

11. Once it becomes warm, scoop it and serve it in a bowl. You can decorate it with saffron strands, chopped almonds, etc.

How to make a badam ka halwa recipe with stepwise images:

6. Let it cook. 
Keep stirring the liquid mixture, which slowly forms bubbles and starts to thicken. Takes around 3 to 5 mins.

10. Turn off the flame once the mixture starts oozing out the ghee and gets solidified. Be careful at this stage. Keep the flame low. Add a pinch of salt.

14. Once it becomes warm, scoop it and serve it in a bowl. You can decorate it with saffron strands, chopped almonds, etc.

Tips and tricks to get a perfect badam halwa.


1. The non-stick pan/ Iron Kadai works best for this recipe. 

2. You may adjust the sugar as per your choice. Half cup for mild sweetness, 3/4th cup for medium-level, and 1 cup for very sweet. I prefer 1 cup.

3. If the mixture becomes dry, add some warm water (Say 1 to 2 tbsp) and stir it on a low medium flame until you get the right grainy scoopable consistency.

4. In case if you add more water, stir it for more time.

5. Adding enough ghee helps in getting a soft and melt-in-mouth halwa texture.

6. Store the halwa in an airtight container for up 1 week in the refrigerator and 2 days over the counter.

7. A pinch of salt is added to sweets just to balance and enhance the overall flavor. Please do not add more than a pinch.
