This simple, vibrant, nourishing salad is all you need on a hot summer day. Mung bean salad has no oil dressing and is perfect for lunch salad or an evening snack.

Green mung beans
can be used in many ways. You can soak them overnight and use them in a salad or steam it to make 
moong dal subzi for roti and sundal recipes. (Sundal is a Tamil word; it means boiled dal with seasoning).

Mung bean is also called green gram, moong dal, mung dal, and pachai payaru in Tamil. Mung bean has numerous benefits and is very healthy for skin and hair. Alright, now let's get into the recipe!

Ingredients:

Boiled sprouted mung bean - 1/2 cup
Onion -1 
Tomato - 1 
Avocado - 1
Carrot - 1
Raw mango - 1
Lettuce - 1/2 bunch
Cilantro - 1/4 cup chopped
Lemon juice - 1 tbsp
Salt - As per taste
Pepper - As per spice
Green chili - optional
Red chili powder - optional

How to make sprouted mung bean salad:


1. Mung beans should be soaked for 12 hours; rinse them well and sprout them if you have time, or boil/steam them directly using water with a pinch of salt on medium flame. (You can also use store-bought sprouted mung beans).

Slice or shred the vegetables according to your preference. I have sliced onion, tomato, avocado, semi-raw mango, and lettuce into small bite-sized pieces and grated the carrots.

2. Place all the ingredients in a wide bowl.

3. Combine everything gently and add lemon juice, salt & pepper before serving.
