The other names for black-eyed beans are black-eyed peas, cowpeas, goat peas, lobia, lobya, rongi, chawli. karamani, or thattapayaru in Tamil, alsande kalu in Kannada, and alasandalu in Telugu.

Lobia is packed with nutrients, vitamins, and minerals. You all know that I'm a salad person and love to try various kinds of salads for our lunch. Plus, adding a cup of boiled beans in the regular veg salad supplies a lot of protein which in turn gives a satiated feeling for a longer time.

In this lobia salad recipe, I have combined around 9 assorted varieties of veggies to make it healthy and wholesome and also offers a diverse flavor. The boiled bean has a soft firm texture with a nutty flavor, and the bell pepper has a crunchy texture. Plus, the raw mango gives a sour taste and shredded carrot gives a mildly sweet flavor to this salad.

The black-eyed bean is very nutritious to include in the regular diet. I have prepared lots of Indian dishes using this bean.  Lobia sabzi is one of my favorite and a very popular side dish. Serves - 3 
Cuisine - South Indian.
Course - Salad/Snack.
Prep time - 15 mins | Soaking time - Overnight | Cook time - 15 mins.
Diet - Vegetarian & Vegan.

Ingredients:


1. Black-eyed bean - 1 cup boiled
2. Red onion - 2 tbsp
3. Tomato - 3 tbsp
4. Green bell pepper - 2 tbsp
5. Red bell pepper - 2 tbsp
6. Semi- raw mango - 1/4 cup
7. Cucumber - half  cubed
8. Carrot - 1 medium shredded
9. Red or Purple cabbage - 2 tbsp
10. Coconut - 2 tbsp shredded
11. Cilantro/ coriander leaves - 2 tbsp
12. Lemon - half
13. Salt - as per taste
14. Red chili powder - 1/2 tsp

Preparation:


1. Wash and soak the dried black-eyed bean in water for 8 hours or overnight. 

2. Next day, pressure cook the soaked beans along with salt and water for 15 minutes on a medium flame. Switch off once it is done. Strain the water and keep the boiled bean aside.

3. Then, wash and chop the veggies as per your choice.

How to prepare lobia salad with step-wise images:


1. Take a large salad bowl and add in all the chopped vegetables.

2. Now, add the boiled black-eyed beans/lobia.

3. Put some salt and red chili powder for spice. (Note: You may add pepper powder, chat masala, finely chopped green chilies, black salt, etc).

4. Give it a nice mix using a ladle.

5. Add finely chopped cilantro, shredded coconut, and finally squeeze some lemon juice over the salad. Mix it well and let it rest for 10 minutes.
