Sundal podi recipe | Sundal powder | sundal masala powder for poriyal
Sundal Podi is a dry spice mix powder used to make South Indian
savory sundal and poriyal recipes. Sundal podi is made with channa
dal, urad dal, toor dal, coriander seeds, red chili, sesame seeds, and
asafoetida/hing. This podi can be added to any type of sundal.
Sundal is a Tamil word, which means the lentils/beans/legumes are soaked, boiled, and seasoned in herb oil(tadka) and flavored with grated coconut and coriander leaves.
Sundal is a healthy and savory snack recipe. Sundal recipes are widespread among south Indian and Tamil cuisine. Sundal can be made with chickpeas, black channa, kollu, mung bean, kidney bean, black-eyed bean, etc. The spiciness can be adjusted as per your choice.
Sundal is usually served as prasad/prasadham in Hindu temples and made at home during the Navaratri festival. Ganesh Chaturthi, Krishna Jayanthi in Tamil Nadu.

Sundal powder ingredients:
Toor dal - 2 tbsp
Urad dal - 2 tbsp
Channa dal - 2 tbsp
Coriander seeds – 4 tbsp
White sesame seeds - 1 tbsp
Red chili – 5 (as per spice)
Red chili – 5 (as per spice)
Asafoetida/Hing - 1/2 tsp
Notes:
1. Adjust red chili as per spice level.
2. Add 1 to 2 tsp of sundal podi while making sundal and poriyal.
3. Add hing while grinding the powder.
How to make sundal podi:
1. In a pan or Kadai, dry roast toor dal, channa dal, and urad dal
on a low flame. Fry until it becomes golden brown and the raw smell
leaves off. This should take 5 minutes or so.
2. In the same pan, dry roast the coriander seeds, sesame seeds, and red
chili one by one over a low flame.
3. Transfer all the roasted ingredients to a plate and cool them completely.
4. Then crush the ingredients to a fine powder in a spice grinder or
mixie.
5. Transfer the powder to an air-tight glass container and store it. Use a
clean, dry spoon for longer shelf life.
6. Use the sundal podi for vegetable poriyal or stir-fries and any
sundal.
