Vazhakkai podimas is a stir-fry recipe made from steamed raw banana, onion, and various spices. Plantain podimas is a healthy and tasty South Indian accompaniment recipe. It is a savory side dish that goes well with sambar, rasam, kuzhambu, curd rice.

Podimas is a Tamil word for mash/crush/crumble. Also, the Podimas recipe can be made from raw bananas and potatoes as well. I will soon post the potato podimas on my blog.

In South Indian cuisine, raw bananas are used in many different ways. Some of the popular recipes are Vazhakkai varuval, Vazhakkai poriyal, Vazhakkai chips, Vazhakkai podimas, Vazhakkai bajji, vazhakkai kootu, and so on.

Raw banana is also known as green plantains in English, Vazhakkai in Tamil, Balekai in Kannada, Aratikaya in Telugu, vazhakka in Malayalam.

How to cook raw banana for vazhakkai podimas:


Raw banana can be boiled in an open saucepan with water for 15 minutes. Wash banana, trim the edges and do not peel the skin. Simply chop into two pieces and add salt, turmeric to the water. Cover it with a lid. Let it boil and poke the fork or skewer to test check the banana.

Alternatively, it can be cooked in a pressure cooker with little water for 5 to 10 mins. Do not overcook, the plantain should be soft, cooked, yet firm enough to grate/crumble/chop. Always peel the banana skin once it is cooled down. Apply a few drops of oil to hands if stickiness presents in raw banana.

Ingredients:

Raw banana - 3 medium
Red onion - 1 medium
Turmeric - Half tsp
Water - 500 ml
Salt - 1.5 tsp or As per taste

To season:

Coconut oil - 1 tbsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Channa dal - 1 tsp
Urad dal - 1 tsp
Red chili - 1
Green chili - 1
Curry leaves - 1 sprig
Ginger - 1 inch crushed

To garnish:

Cilantro - 4 twigs
Coconut - 2 tbsp grated
Lemon juice - 1 tsp optional

Notes:

1. This raw banana podimas is made from an Indian raw/green banana variety (Vazhakkai). 

2. Raw banana can be chopped into small pieces/mashed/grated. It's your choice. I prefer tiny bite-sized pieces.

3. I have mentioned coconut oil as it makes the curry aromatic and flavorful. You can use any variety like sesame oil, peanut oil, canola oil, etc. You may also use more oil if you desire.

4. Adjust green and red chilies as per spice. Crushed garlic can be added too.

5. Turmeric powder gives a nice yellowish hue to the podimas.

How to make vazhakkai podimas:


1. Clean and wash raw banana/vazhakkai in water.

2. Trim the edges, and chop into 2 or 3 pieces.

3. Heat 500ml water in a saucepan over a medium flame. Add some salt and turmeric powder if required. Let the water come to a rolling boil. Put the chopped pieces and add more water if needed. 

4. Cover it with a lid and let it cook for 10 mins.

5. Check in between and flip the pieces for even cooking. Insert a toothpick/skewer/fork into the banana for test check. Turn off the flame once it is cooked fully.  

6. Take out the cooked pieces and place them on a plate. Let it cool down.

7. Peel the skin. (Note: Apply a drop of oil to your fingers if required).

8. Grate it or Chop them into small pieces.

9. Heat coconut oil in a heavy-bottomed pan/Kadai.

10. Temper mustard seeds, cumin seeds, channa dal, urad dal, green chili, red chili. Saute for a minute.

11. Now, add curry leaves, crushed ginger, hing.

12. Add sliced onion and saute until it turns pink or translucent. Sprinkle some salt to speed up the cooking process.

13. Add a pinch of turmeric powder if you want.

14. Now add the cooked raw banana pieces.

15. Saute for a few minutes. Check salt. 

16. Add some grated coconut and give it a quick stir.

17. Garnish with chopped cilantro/coriander leaves. You can squeeze lemon if you like the tangy flavor but it's optional.

18. Raw banana podimas/Vazhakkai podimas is ready to be served with sambar, rasam, curd rice.

How to make raw banana podimas:

13. Saute until it turns pink or translucent.

14. Sprinkle some salt to speed up the cooking process.

17. Saute for a few minutes. Check salt.

18. Cook for 5 to 10 mins. You may sprinkle some water if it looks dry.

19. Add some grated coconut and give it a quick stir and turn off the flame.
