Rajasthani kadhi is a traditional North Indian recipe that is also popularly known as Marwari kadhi in Rajasthan. It is a spicy yogurt-based gravy that is full of varied spices and flavors.

Rajasthani kadhi is a tasty and aromatic gravy that comprises a unique combination of flavors which include spicy, sour, and tangy as well. It is such a warm and comforting side dish that goes well with wheat roti, pulkas, parathas, Bajra roti, Jowar roti, and hot steamed basmati rice. Dahi denotes yogurt in Hindi.

Rajasthani kadhi calls for sour curd, besan, and Indian spices as the main ingredient, and also the full-fat sour curd is vital to get a perfect kadhi. The besan indicates a garbanzo/chickpea flour in Hindi that basically helps to thicken the gravy.

In fact, each and every state in India has its own version of kadhi. The Rajasthani version of Marwari kadhi is very hot and spicy and looks mild red in color. It has a strong, and pungent flavor too. You can adjust the chilies as per your required spice level.

Rajasthani kadhi is a simple and straightforward recipe. It is also easy to prepare with minimal effort. If you have extra time, also want to make it even more appetizing, just prepare lentil fritters or pakoras and add to the gravy. The Rajasthani kadhi pakora is so delicious and fulfilling.

The combination of Rajasthani kadhi with rice is typically referred to as Kadhi Chawal which is a traditional food in Rajasthan. As I discussed before, that each state has its own way of preparing kadhi, the Gujarathi version of Gujarati Kadhi is a curd based gravy that has a combination of sweet, sour, and tangy flavor. This version is slightly thin, not very spicy, so gentle, and soothing for the stomach. Gujarathi kadhi has always been our family favorite so we often make this dish at home. Another version is the Maharashtrian kadhi, which is somewhat sweet due to its addition of sugar/jaggery. This can be prepared with fresh/sour curd too. And Punjabi Kadhi is rich, thick, and creamy plus it has pakoras in it, which makes the dish savory and delicious. The Sindhi Kadhi is a besan based curry that tastes sweet and sour. It is usually cooked either with tamarind extract or kokum, along with tomatoes for a tangy flavor. Additionally, vegetables like okra, potatoes, drumstick are added too. So, the ingredients in most of the kadhi versions are pretty much the same except the spices.

Ingredients for kadhi:


For yogurt mixture:


Sour curd/dahi/yogurt - 1 cup
Besan/chickpea flour - 5 tbsp
Red chili powder - 2 tsp
Corriander powder - 1 tsp
Turmeric powder - 1 tsp
Water - 4 cups/1 liter
Salt - 1 tsp/As per taste

First Tadka:


Oil - 2 tbsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Black peppercorns - 1/4 tsp
Fenugreek seeds - 1/2 tsp
Bay leaf - 1
Cloves - 2
Curry leaves - 1 sprig
Ginger - 2 tbsp crushed
Green chili - 1
Red chili - 1
Hing/Asafoetida - 1/4 tsp
Water - 1/4 cup

Second Tadka:


Ghee - 1 tbsp
Hing - 1/2 tsp
Red chili powder - 1/2 tsp
Kasoori methi - 1 tbsp crushed
Cilantro - 3 twigs chopped.


How to make Rajasthani kadhi recipe:



1. Take a large bowl. Pour 1 cup of curd, 5 tbsp chickpea flour, red chili, coriander, and turmeric powder. 

2. Whisk it nicely for 5 mins and make sure there are no lumps formed. 

3. Pour 1 liter of water and let the curd besan mixture rest for 10 minutes. 

4. Let's prepare the first tadka/seasoning. Heat 2 tbsp of oil in a saucepan. Splutter mustard seeds, cumin seeds, peppercorn, fenugreek seeds, etc. Fry all the ingredients over the low flame until it turns aromatic. Then pour 1/4 cup of water.

5. Now add the curd mixture slowly. Let it boil until the raw besan smell leaves off and keep stirring the mixture over medium flame.

6. Once it comes to a gentle boil and turns frothy, immediately reduce the heat to a low flame. Now add the required salt and pour water as per your required consistency. 

7. Let the kadhi boil and thicken over a low flame for 10 mins. 

8. Prepare for the second tadka. Take a small pan, heat ghee over a low flame, add required red chili powder, hing, and crushed Kasuri methi. Give it a mix and put off the flame.

9. Pour the tadka over the kadhi and give it a quick stir. 

10. Garnish kadhi with cilantro/coriander leaves.

11. Rajasthani kadhi is ready to serve along with roti/steamed rice.


Tips and tricks to get a perfect kadhi:



1. Sour and thick curd works best for the Rajasthani kadhi.

2. Chickpea / Besan flour is added to thicken the Kadhi, so adjust the flour as per your preference.

3. Reduce water quantity and increase the besan flour if you like kadhi to be thick and creamy.

4. Whisking curd and sieving besan flour are vital steps to get a lump-free, smooth, and creamy texture.

5. Adding a generous amount of curry leaves gives a nice flavor.

6. Boil the kadhi well on a low flame for a minimum of 10 minutes or until the raw besan flour smell leaves off.

7. Keep stirring the kadhi often to avoid curd-besan mixture sticking to the bottom of the pan.

6. Now add the curd mixture slowly.

7. Let it boil until the raw besan smell leaves off and keep stirring the mixture over medium flame.

8. Once it comes to a good boil and turns frothy, immediately reduce the heat to a low flame.

9. Now add required salt and water as per consistency.

10. Let the kadhi boil and thicken over a low flame for 10 mins and switch off the flame once it is done.

11. Prepare for the second tadka. Take a small pan, heat ghee over a low flame, add required red chili powder, hing, and crushed Kasuri methi. Give it a mix and put off the flame.
